Grilled Steak Elote Tacos + Creamy Cilantro Lime Dressing 🌽🥩🌮

Ingredients
For the Steak:
1 lb flank or skirt steak
1 tablespoon olive oil
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon cumin
Salt and black pepper, to taste
Juice of ½ lime
For the Elote (Mexican Street Corn) Topping:
1½ cups grilled corn kernels (about 2 ears)
¼ cup mayonnaise or sour cream
¼ cup crumbled cotija cheese (or feta)
½ teaspoon chili powder
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
Salt, to taste
For the Creamy Cilantro Lime Dressing:
½ cup Greek yogurt or sour cream
¼ cup fresh cilantro, chopped
Juice of 1 lime
1 garlic clove, minced
1 tablespoon olive oil
Salt and pepper, to taste
For Serving:
Small corn or flour tortillas, warmed
Extra cotija, lime wedges, chopped cilantro (optional garnish)
Instructions
Prepare and Grill the Steak:
Rub the steak with olive oil, lime juice, and seasonings. Grill over medium-high heat for 4–5 minutes per side, or until desired doneness. Let rest for 5 minutes, then slice thinly against the grain.
Make the Elote Topping:
In a bowl, mix grilled corn, mayo (or sour cream), cotija, lime juice, chili powder, cilantro, and salt. Set aside.
Blend the Dressing:
In a blender or small food processor, combine Greek yogurt, cilantro, lime juice, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.
Assemble the Tacos:
Fill each tortilla with sliced steak, a spoonful of elote topping, and a drizzle of cilantro lime dressing. Garnish as desired.
