In the heart of Yucatán, just 40 miles east of Merida, lies the magical site of Izamal “La Ciudad Amarilla” -The Yellow City.

Why Yellow? There are many versions of the story.. one is by far the one that seems to be the right one, is that the Pope was visiting in 1993, and the town need it to be ready.

The San Antonio de Padua Convent is located on the plateau of the higest hill of the city, you can walk around by going up in one of the 3 ramps.

Birote is a type of bread made with sourdough from Guadalajara, Jalisco. The word birote is inspired by the surname of Camille Pirotte, a Belgian baker, who arrived in Guadalajara with the French troops of Maximilian I, in 1864.

There are more than 500 bakeries in Guadalajara and in the urban area in general around 1,200 that produce salted birote. A bakery handles an average of five to eight packages of daily production; one package comprises 500 rolls.

As popular, there are two types: salted birote and fleischmann. The salado is short and is used for torta ahogada, while the fleischmann is used for other "tortas or lonches". A birote measures from 15 cm to 1.5 meters.

If you are visiting Guadalajara visit bakeries such as Las Novedades, on Mezquitán street; the Triunfo, in private children of Molquecho; and Santa Teresita, catalogued as the most traditional bakery colony and above all the bakers in La Central Camionera Vieja de Guadalajara.

As we are feeling the summer slipping away and we welcome the colorful vegetables of fall, there is always some recipes that can be tweaked to keep it fun.

No corn? No problema! Try our roasted carrot “Cobb style” recipe - a fun and easy side dish perfect to mark the beginning of fall gatherings season. So versatile, you can alternate spices and creamy salsas, but never the cotija cheese!

You can grill them but for this recipe use used the oven. Pre-heat at 450 degrees, use avocado oil, lemon pepper and kosher salt to rub the carrots. You can always sprinkle cayenne pepper to add a kick to it. Roast for 15-20 min making sure you move them a little bit time to time.

When ready to serve, squeeze some lime drops to the carrots add your favorite creamy salsa (we used a creamy jalapeño) and don’t feel shy when sprinkle the cotija cheese! Enjoy.
