Italian sausage and peppers w/ Penne. Everyone had seconds and this was gone in 10 min.

Recipe: fry a 5 pack of Italian sausage in a large cast iron or non stick pan, when fully cooked sausage remove from pan, rest and slice into rings. Rough chop 1 red bell pepper & 1 green bell pepper & 1 white onion with some olive oil, salt/pepper, and sautée until soft but not soggy. Prepare 2 cups (dry) penne pasta according to package instructions. Once pasta is done and veggies are soft, add everything plus sausages back into pan. Add 4 tbs of butter & some red pepper flakes. Stir and continue to fry until well mixed. Season with s&p to taste. I also deglazed the pan with some chicken stock. Cost about $8 and fed a very hungry family of 4. Enjoy!

I made this Mexican Street Corn “casserole” for a Labor Day bbq yesterday. It was gone in an hour! It was SO SO good!!!

32oz frozen corn thawed
1/2 cup mayonnaise
1/2 cup sour cream
1.5 tsp chili powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp cayenne optional
10oz queso fresco grated or crumbled
1/4 cup fresh cilantro chopped

Put all ingredients (only 5oz of the queso fresco) into a casserole dish and mix very well! Cook for 35 minutes at 350. Let it cool and then sprinkle the remaining 5oz of queso fresco and chopped cilantro on top. I served mine with tortilla chips. It was a hit!

It's near the end of the month and I'm low on groceries. So it's "pot-luck" for me. Meaning of pot luck: if there's something to eat in the pot I'm lucky 😂😋🤣. Tonight is for lack of a better name: chicken noodle medly. A can of chicken, half an onion diced, half a bag of frozen peas and carrots thawed, and a 7oz. bag of some sort of tube shaped noodles, (The label only called it "macaroni product.") One regular sized can of cream of chicken soup (undiluted) and one can of cream of mushroom soup (undiluted). Preferred seasonings. I used a combination of garlic salt and Mrs. Dash original.
Start the water to boil the macaroni and cook according to the package directions. While waiting for the water to boil, in another pot combine everything else and put it on a low heat to start it cooking. When the macaroni is finished, drain and add to the other pan of ingredients. Stir to combine and season to taste. Heat to desired cooking heat.
This was double luck for me. I had something in the pot (thank you God) AND it taste pretty good.

One of my go to meals that are cheap and easy if I can’t think of anything to make. Pasta carbonara 😍

-Boil your spaghetti noodles
-fry 6 pieces of bacon
-In same pan that you fried your bacon, (leave the grease) mince half an onion and cook for 5-7 minutes then add a large scoop of minced garlic. Cook for 1-2 minutes. Put pan to the side
-add spaghetti noodles back to the onion/garlic pan and add 2 cups of shredded Parmesan cheese and 2 eggs beaten in a mixing bowl and mix together.
-keep mixing sauce into noodles until the sauce becomes thick.
-add salt and pepper and crumbled bacon on top and mix everything together
-enjoy!

So an onion, pack of spaghetti noodles, pack of bacon, two eggs, container of shredded Parmesan cheese and a container of minced garlic cost me about $15 and it feeds my family for two days.

This was a huge hit!
Chili cheese dog sliders.
Cut a pack of kings Hawaiian rolls in half and spread mustard on each side. Sprinkle some shredded cheese on the bottom half and then layer on your favorite hotdogs cut in half (lengthwise) on the cheese, add your favorite chili (I used homemade leftovers), top with more shredded cheese and red onions and add the top of the buns. Make a mixture of half a stick of butter, a little garlic powder and onion powder and some dried chopped chives. Brush on top of the rolls, cover in foil and bake at 350° for about 25 minutes or until the cheese is melted.
