There’s a quiet intensity about Chef Evan Funke () that you don’t forget.

His presence is calm but deeply focused. He’s put in the 10,000 hours of rolling pasta (and many times over) and continues to approach his craft every day with discipline, care, and a deep respect for tradition and mentorship.

We talked about pasta, of course-but also about ego, choosing the harder path, and what it really means to build a community inside your restaurant walls. That same mindset shapes how he gives back, supporting organizations like Baby2Baby, Alex’s Lemonade Stand, World Central Kitchen, and No Kid Hungry.
