"Hibachi… in a taco?! 🤯"
I walked past this massive double-decker food truck twice before I realized what I was missing. Fried rice, tender steak, grilled zucchini, cheese, yum yum sauce, sesame seeds — all wrapped in a grilled tortilla.

When I got to the Hungry Black Man Food Festival, I made myself a promise — I was going to try something I’d never had before. I walked up and down the rows, scanning every vendor, looking for that one new thing.
In the middle of it all was a massive double-decker food truck — Dtown Hibachi Cafe. You’d think it would be an obvious stop, but I passed it twice without a second thought. The sign said “hibachi,” and I’ve had hibachi plenty of times, so I kept moving.
On my third pass, something told me, Check the menu. That’s when I saw it: Steak Hibachi Taco. I’ve had just about everything in a taco… but never hibachi. That was it — my “something new.”
I stepped up to order and started grilling the young lady behind the counter: “Is it on pita bread? A corn tortilla? How do y’all do it?” She gave me a look like, Why all the questions? but I quickly explained, “I’ve never even heard of hibachi in a taco, so please forgive me.” She cracked a smile and rang me up.
The wait was a little long, but when I finally got my order, I knew I’d found my festival gem.
This was a steak hibachi taco on a grilled flour tortilla — fried rice, tender steak, grilled zucchini, melted cheese, a generous drizzle of yum yum sauce, and a sprinkle of sesame seeds to finish.

The beauty of this taco is in the layers — every bite offers something different, yet it all works together. If I had one critique, it would be just a little more seasoning on the meat, but that could be a personal preference — it’s still fine as it is. From the first bite to the last, it was pure flavor.
