Cabbage Rolls 🥬

Healthy and delicious cabbage rolls that are sugar-free and super low in carbs. Perfect for a complete dinner that keeps my husband's glucose stable and leaves us feeling super satisfied.

INGREDIENTS:
🥬 Filling:
8 oz white button mushrooms, diced
1 lb ground chicken
3 green onions (white parts chopped for the filling, green parts for garnish)
4 large garlic cloves, minced
1 tbsp low-sodium soy sauce (or coconut aminos)
⅛ tsp sesame oil
⅛ tsp ginger powder
1 tsp salt (or to taste)
Pinch of black pepper
Avocado oil for cooking

🥢 Sauce:
2 tbsp low-sodium soy sauce
1 tbsp allulose
1 tsp rice vinegar
¼ tsp sesame oil
⅛ tsp garlic powder
1 tsp green onions (green parts), diced
Pinch of black pepper

✨ For Assembly & Serving:
1 large Napa cabbage
Sesame seeds and the green parts of the green onions for garnish

Instructions:
1. FILLING: Heat a drizzle of avocado oil in a skillet. Add the diced mushrooms with a little salt and cook until they have released all their water. Add the white parts of the green onions and the garlic, and cook for another minute. Season with pepper, ginger powder, and soy sauce. Add the ground chicken and cook until it is well done. Remove from the heat and stir in the sesame oil.

2. CABBAGE: While the filling is cooking, boil the cabbage leaves in water for about 5-10 minutes, or until the white part is tender and bendy. Carefully remove them and pat them very dry with a paper towel.

3. ASSEMBLE & COOK: Place about 1 ½ tablespoons of filling on each cabbage leaf and roll it up. In a clean skillet over medium-high heat, pan-fry the rolls on all sides until golden brown.

4. SAUCE & SERVING: In a small bowl, mix all the sauce ingredients. Serve the rolls hot, pour the sauce over them, and garnish with the green parts of the green onions and sesame seeds.

Lemon Herb Chicken with Cauliflower Mash

Ingredients

For the chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
1 tbsp lemon juice
1 tsp lemon zest
1 tsp dried oregano
1/2 tsp thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

For the cauliflower mash:
1 medium head of cauliflower, cut into florets
2 tbsp butter
1/4 cup heavy cream (or unsweetened almond milk)
1/4 cup grated Parmesan cheese
Salt and pepper, to taste

Instructions

Prepare the chicken:
Season the chicken breasts with salt, pepper, oregano, thyme, and lemon zest.
In a large skillet, heat olive oil and butter over medium heat.
Add the chicken and cook for 5–6 minutes on each side until golden and cooked through.
Remove the chicken and set aside.

Make the lemon garlic sauce:
In the same pan, add minced garlic and sauté for 30 seconds.
Pour in the lemon juice and a splash of water to deglaze the pan.
Simmer for 1–2 minutes until slightly thickened. Return chicken to the pan and coat with the sauce.

Prepare the cauliflower mash:
Steam or boil the cauliflower florets for 8–10 minutes until very tender.
Drain well and blend or mash with butter, cream, and Parmesan until smooth.
Season with salt and pepper.

Serve:
Plate the creamy cauliflower mash and top with the lemon herb chicken.
Drizzle with sauce from the pan and sprinkle with chopped parsley.

Ingredients

-- For the steak bites:
400 g (about 14 oz) sirloin steak, cut into bite-sized cubes
2 tbsp butter
1 tbsp olive oil
3 garlic cloves, minced
1 tsp paprika
Salt and black pepper, to taste
1 tbsp chopped fresh parsley (optional)

-- For the creamy sauce:
2 tbsp butter
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 tsp chili flakes (optional, for heat)
1 tbsp lemon juice

-- For the zucchini noodles:
2 medium zucchinis, spiralized
1 tbsp olive oil
Salt and pepper, to taste

Instructions

-- Prepare the steak bites:
Pat the steak cubes dry with paper towels. Season with salt, pepper, and paprika.
Heat 1 tbsp olive oil and 2 tbsp butter in a large skillet over medium-high heat.
Add the steak in a single layer and sear for 2–3 minutes per side until browned and cooked to your liking.
Remove from the skillet and set aside.

-- Make the creamy garlic butter sauce:

In the same pan, reduce heat to medium. Add 2 tbsp butter and minced garlic, sautéing for 30 seconds until fragrant.

Pour in the heavy cream, then stir in Parmesan cheese, lemon juice, and chili flakes.
Simmer for 2–3 minutes until slightly thickened.

-- Cook the zucchini noodles:

In a separate pan, heat 1 tbsp olive oil over medium heat.
Add the spiralized zucchini and cook for 2–3 minutes until just tender. Season with salt and pepper.

Combine and serve:

Return the steak bites to the creamy sauce and toss to coat.
Serve the steak bites over the zucchini noodles.
Garnish with chopped parsley and a sprinkle of Parmesan, if desired.

Who says burrata is just for summer tomatoes (or dinner for that matter)? For a hearty Mediterranean meat-free breakfast that’s not your standard fare of eggs, bring out the burrata! It’s a semi-soft white cheese made from mozzarella and cream. Once you cut into the cheese, the center oozes a soft creamy cheese and is perfect for spreading on bread.

When choosing the perfect bread for this recipe, opt for a whole grain version with interesting nuts or seeds, that’s rich with extra fiber. And if you want to go extra-Mediterranean, toast it in the oven topped with some olive oil and garlic—it’s the perfect option for a lazy brunch.

If you’re planning to have this breakfast on a weekday, pre-roast the butternut squash a night or two before.

Makes 4 servings
Ingredients
2 cups butternut squash cubes
2 teaspoons extra virgin olive oil
1/4 teaspoon kosher salt
Freshly ground black pepper
4 whole grain bread slices
One 8-oz ball burrata
1 cup microgreens
2 Tbsp pumpkin seeds
Balsamic vinegar

How to Make It
Preheat oven to 400°F. Place the butternut squash in a medium bowl, drizzle with extra virgin olive oil, and sprinkle with salt and pepper. Toss to coat. Spread out in a single layer on a lined baking sheet. Roast butternut squash for 30 to 35 minutes, flipping squash halfway through. Squash is ready when fork tender and lightly browned in some areas.
Toast the bread. Cut slices in half and place on a large platter with burrata and butternut squash. Top with microgreens, pumpkin seeds, and a drizzle of balsamic vinegar.

I haven’t posted a proper dessert recipe in a while as I don't have the biggest sweet tooth, but every now and then I make something to satisfy my rare sugar cravings 😋 You’ll only need 4 ingredients and it’ll take you under 10min to prepare.

You’ll need:
✔️No sugar milk chocolate (180g)
✔️Coconut oil (1 tbsp)
✔️Peanut butter (120g)
✔️Icing sugar replacement (30g or more, I used monkfruit)

Instructions:
1. Line a muffin pan with 6 paper liners.
2. Mix peanut butter with icing sugar replacement.
3. Melt chocolate with coconut oil.
4. Use 2/3 of your chocolate and spread it evenly between 6 paper liners.
5. Top with peanut butter mixture and add the rest of the chocolate on top.
6. Refrigerate for at least an hour.
