Quick & easy one pan dinner!
Most nights I am feeding my family of 5, but other times I am feeding 7, or even 9+.
We have a blended family with kiddo #10 on the way. So easy and filling meals are always a win in our house.

Each bag was only $5 from the canning table at Beasley Farms!

What ways will I use/store this produce?
#1 freeze them into serving size portions
#2 use fresh while I can by making zucchini bread/muffins (which then can be frozen) and salsa
#3 dehydrating peppers for a version of paprika and tomatoes for a flavorful tomato powder.

I won't need to buy tomatoes, peppers, zucchini, or onions for 6 months 🤣

Happy Monday!
I've already had to warm my coffee up twice 🤣
Sometimes that is just how our mornings go. Mondays always require a little more push with the boys and their school work.
I wake up at 7, sometimes earlier. I don't rush, but by 7:30 I am up starting breakfast. We usually eat between 8-830 and start school at 9.
