Lemon Olive Oil Cake 🍰
Moist, fragrant, and elegant — perfect for brunch or afternoon tea.
Ingredients:

1 cup sugar

3 eggs

1/2 cup olive oil

1/2 cup milk

1.5 cups flour

1 tsp baking powder

Juice + zest of 2 lemons

Instructions:

Beat sugar and eggs until fluffy. Mix in oil, milk, lemon.

Fold in dry ingredients.

Bake at 350°F for 35–40 minutes. Dust with powdered sugar.

Raspberry Swirl Elephant Ears
Ingredients:

1 roll puff pastry dough

3 tbsp raspberry compote

2 tbsp white sugar

Instructions:

Roll out pastry; spread raspberry compote evenly.

Sprinkle sugar and roll both long sides to meet in the middle.

Slice into 1/2-inch thick pieces.

Bake on a lined tray at 390°F for 14–16 mins until caramelized.

Cool fully on rack.

Classic February Birthday Cake (Original)
Ingredients:

8 large eggs

2 cups sugar

2 ½ cups all-purpose flour

1 tbsp baking powder

1 tsp salt

1 cup whole milk

¾ cup butter

1 tbsp vanilla extract

Pink buttercream frosting

Edible glitter or pink sprinkles

Instructions:

Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.

In a stand mixer, beat eggs and sugar until thick and pale.

Sift together flour, baking powder, and salt.

Heat milk and butter in a saucepan until just melted.

Gradually add dry ingredients to egg mixture, alternating with warm milk-butter mixture. Stir in vanilla.

Divide batter into pans and bake 30–35 min. Cool completely.

Frost with pink buttercream and decorate with edible glitter.

Making homemade chocolate from cacao nibs is no easy feat! Grinding and mixing takes patience, but once you get that smooth texture — it’s totally worth it.

What You’ll Need:

1 cup cacao nibs

1/2 cup powdered sugar

1 tbsp cocoa butter (optional)

Pinch of salt

How to Do It:

Roast cacao nibs at 250°F for 10–15 minutes.

Grind the nibs into a paste with a high-speed blender or food processor.

Stir in sugar, cocoa butter, and salt, and blend until smooth.

Let it cool, temper the chocolate, and mold into your favorite shapes.
