🥕 Cooler weather isn't necessarily the end of the garden!

In fact, some crops can actually improve in flavor as temperatures drop. Crops like carrots, beets, kale, and other cool-season vegetables can become sweeter after exposure to cooler temperatures. The cold causes some plants to convert stored starches into sugars, helping protect their cells from freezing temperatures.

Cooler weather can also mean slower, more gradual ripening, giving some crops more time to develop their flavor and color.

So don't be too quick to call it quits on the garden. Some of the best harvests may still be ahead!
