Flourless Blueberry Banana Oat Squares

Soft, fruity, and full of recognizable oat texture.
These easy squares are gently sweet and wonderfully moist.

Ingredients:

- 2 cups (180 g) old-fashioned rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon fine salt
- 2 large eggs
- 1 cup (230 g) very ripe mashed banana
- 3/4 cup (180 ml) milk of choice
- 1/2 cup (120 g) plain Greek yogurt
- 1/4 cup (60 ml) pure maple syrup
- 1 teaspoon vanilla extract
- 1 cup (150 g) fresh or frozen blueberries

Directions:

1. Preheat the oven to 180°C / 350°F. Line and lightly grease an 8×8-inch pan.
2. Mix the rolled oats, baking powder, cinnamon, and salt in a large bowl.
3. Whisk the eggs, banana, milk, Greek yogurt, maple syrup, and vanilla in a separate bowl.
4. Stir the wet mixture into the oats and let it stand for 5 minutes. Fold in fresh blueberries, or frozen blueberries straight from the freezer without thawing.
5. Spread in the pan and bake for 32–38 minutes, until the center is set and the edges are golden.
6. Cool for at least 30 minutes so the squares become firm enough to cut. Makes 9 squares.

Easy White Chocolate Pistachio Cookies

Ingredients

For the Cookie Dough:

1 cup unsalted butter, softened (226 g)
3/4 cup granulated sugar (150 g)
3/4 cup light brown sugar, packed (160 g)
2 large eggs
2 tsp vanilla extract
2 1/2 cups all-purpose flour (315 g)
1 tsp baking soda
1/2 tsp baking powder
3/4 tsp fine sea salt
1 cup roasted pistachios, roughly chopped (130 g)
1 cup white chocolate chips or chunks (170 g)

For the Topping:

1/4 cup chopped pistachios (30 g)
1/3 cup white chocolate chunks (55 g)
Flaky sea salt, optional

Directions

Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
Beat the softened butter, granulated sugar, and brown sugar until light and creamy, about 2–3 minutes.
Beat in the eggs one at a time, then mix in the vanilla.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture and mix just until combined. Do not overmix.
Fold in the chopped pistachios and white chocolate chips.
Scoop the dough into 12–14 large portions, about 2 1/2 tablespoons each. Place on the prepared baking sheets, leaving plenty of space between cookies.
Press extra white chocolate chunks and chopped pistachios onto the tops.
Bake for 10–12 minutes, until the edges are lightly golden and the centers still look slightly soft.
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Finish with a tiny pinch of flaky sea salt if desired.

½ cup (115 g) unsalted butter, softened

½ cup (100 g) granulated sugar

¼ cup (50 g) brown sugar

1 large egg

1 tsp vanilla extract

1½ cups (190 g) all-purpose flour

½ tsp baking soda

¼ tsp salt

¾ cup (130 g) white chocolate chips

½ cup (60 g) freeze-dried raspberries, roughly crushed

Instructions

1. Preheat oven to 175°C / 350°F and line a baking sheet with parchment paper.

2. Beat the softened butter, granulated sugar, and brown sugar until creamy.

3. Add the egg and vanilla and mix until smooth.

4. In another bowl, whisk together flour, baking soda, and salt.

5. Gradually add the dry ingredients to the wet mixture. Mix just until combined.

6. Fold in the white chocolate chips and crushed freeze-dried raspberries.

7. Scoop dough into balls and place them about 5 cm apart on the baking sheet.

Instructions

Moist Carrot Loaf Cake Recipe 🥕🍰

Ingredients

2 cups (250g) all-purpose flour

1½ cups (300g) sugar

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1½ teaspoons cinnamon powder

3 large eggs

¾ cup (180ml) vegetable oil

½ cup (120ml) milk or yogurt

2 teaspoons vanilla extract

2 cups finely grated carrots

½ cup chopped walnuts (optional)

Instructions

1. Prepare the pan

Grease and line a loaf pan with baking paper.

Preheat oven to 170°C (340°F).

2. Mix dry ingredients

In a bowl, combine flour, baking powder, baking soda, salt, and cinnamon.

3. Mix wet ingredients
