Our friend shared with us this refreshing and EASY sheet pan recipe (perfect for summer) in our Mar/Apr issue. ⁠

Chili Lime Sheet Pan Shrimp🍤⁠

Marinade Ingredients⁠
• ½ cup extra virgin olive oil⁠
• 2 tablespoon apple cider vinegar⁠
• 2 teaspoon red pepper flakes⁠
• ¼ teaspoon sea salt⁠
• 1 to 2 cloves garlic, minced⁠
• 2 tablespoons lime juice⁠

Shrimp Ingredients⁠
• 2 pounds jumbo shrimp, peeled with tails on⁠
• Limes or lemons cut into wedges⁠

INSTRUCTIONS⁠
• Add marinade ingredients to a large bowl and whisk together.⁠

• Place the shrimp in a large, non-reactive tray. Pour over the marinade, cover, and store in the refrigerator for at least 30 minutes. Do not marinate for more than 2 hours.⁠

• Heat the broiler in your oven. Line a baking sheet with parchment paper. Using a slotted spoon, remove the shrimp from the marinade and place on the lined baking sheet. Drizzle a small amount of the marinade over each shrimp.⁠

• Place under the heated broiler for 2 to 3 minutes until shrimp have turned bright pink and opaque. Remove the baking sheet from the oven, turn each shrimp, and then return to the broiler for 1 minute.⁠

• Serve immediately with lime or lemon wedges.

FUN FACT FRIDAY: Did you know Texas was the first state to plant flowers alongside the state highways.⁠

According to TxDOT . . . “Shortly after the Texas Highway Department was organized in 1917, officials noted that wildflowers were among the first vegetation to reappear at roadside cuts and fills. In 1932, the department hired Jac Gubbels, its first landscape architect, to maintain, preserve and encourage wildflowers and other native plants along rights of way. By 1934, department rules delayed all mowing, unless essential for safety, until spring and early summer wildflower seasons were over. This practice has stayed in place for more than 60 years and has expanded into today's full-scale vegetation management system.”⁠

Today, TxDOT buys and sows about 30,000 pounds of wildflower seed each year.⁠
