What a fabulous Fall appetizer! 🍁 🍂

ROASTED SWEET POTATO ROUNDS WITH WHIPPED GOAT CHEESE, CRANBERRIES, AND PECANS 🍠

These bites are not only delicious but also a breeze to make, with minimal ingredients and a simple preparation process. They’re also versatile, making them ideal for a variety of occasions, from appetizers to side dishes.

Ingredients: 📜

• 1 tablespoon olive oil
• 1 large or 2 small sweet potatoes, scrubbed clean and sliced into ¼-inch rounds
• 4 ounces goat cheese, softened
• 2 tablespoons milk (any type you prefer)
• 1 teaspoon fresh rosemary, finely chopped
• Kosher salt and freshly ground black pepper, to taste
• ¼ cup toasted pecans, chopped
• ½ cup dried cranberries
• Honey, for drizzling

Directions: ✍🏼

1. Preheat the Oven
Set your oven to 425°F (220°C). Lightly spray a rimmed baking sheet with cooking oil to prevent the sweet potatoes from sticking.

2. Prepare the Sweet Potatoes

HEALTHY QUINOA CHICKEN 🐓CURRY BOWL 🍵

This recipe serves 6️⃣

INGREDIENTS:

1️⃣ tablespoons olive oil
1️⃣ cup diced onion
1️⃣ lbs. cut up boneless skinless chicken
2️⃣ tablespoons curry paste
2️⃣ teaspoons garam masala (cumin or roasted coriander are also good)
1️⃣ tablespoon ginger paste
3️⃣ cloves garlic
2️⃣ cups tomato puree
2️⃣ cups low-sodium organic chicken 🐓 broth
3️⃣ cups diced eggplant (peel removed)
3️⃣ cups diced fresh tomatoes 🍅
2️⃣ cups of cooked quinoa

toppings: crushed almonds, rice, noodles, cilantro, green onions, almond butter

INSTRUCTIONS:

Heat the olive oil in a deep pan over medium high heat. Add ➕ the onions and saute for 2-3 minutes until soft and fragrant. Add the chicken 🐓, curry paste, garam masala, ginger, and garlic. Stir fry for another 3-5 minutes to get the chicken🐓 pieces browned.

Add the 🍅 tomato 🍅 puree, broth, eggplant, 🍅 tomatoes, and quinoa. Cover and simmer for 15-20 minutes.

When it's done, it will look like the picture above - sort of like a stew.

When the chicken 🐓 is cooked through, serve in big bowls topped with all the toppings like rice, cilantro, green onions, and crushed almonds for crunch.

Ps there is also a slow cooker variation: dump everything in the slow cooker and cook on high for 4 hours or low for 6-8.

A healthier twist on classic banana bread!

I made a few simple swaps to give this banana bread a little more nutritional value while keeping it absolutely delicious.

Instead of 1½ cups all-purpose flour, I used:

½ cup buckwheat flour — a naturally gluten-free whole grain that provides fiber, minerals, and plant-based protein.

½ cup chickpea flour — adds protein, fiber, and nutrients while giving the bread a delicious, slightly nutty flavor.

½ cup almond flour — adds healthy fats, vitamin E, and a tender, moist texture.

I also reduced the sugar from 1 cup to just ¾ cup, letting the natural sweetness of the ripe bananas shine through.

I mashed the bananas and folded them in with the chopped walnuts, and the result was so good!

For muffins: Use the same batter and bake at 350°F for about 30 minutes.

Sometimes small ingredient swaps can make a delicious difference.

Found some beautiful mullein growing along the trail today! 🌿💛 I picked quite a few of the tiny yellow flowers and brought them home to slowly build up enough for a batch of homemade mullein-infused ear oil.

Most of the stalks I found had already been picked pretty clean, but thankfully there were still plenty of flowers to collect. 🌼

Little by little, the jar is getting closer! 💛🌿

🌿 Bull Thistle — More Than Just a Prickly W**d!

Bull thistle (Cirsium vulgare) is easy to recognize by its deeply lobed, spiny leaves and beautiful purple flower heads.

🌱 Did you know?
• Young stems can be peeled and cooked.
• The roots are edible when properly prepared.
• The flowers provide nectar for bees, butterflies, and other pollinators.
• Birds such as goldfinches enjoy the seeds and may use the fluffy thistledown for nesting material.

🌿 Traditional Herbal Uses: Bull thistle has a history of traditional herbal use, including preparations made from the root and whole plant. Historical sources describe decoctions, infusions, and poultices used externally for various complaints. Have you ever used bull thistle in a poultice? If so, please share!

🌿 MAKING MULLEIN TINCTURE — FROM LEAF TO BOTTLE 🌿

One of my favorite ways to preserve mullein is by making a simple herbal tincture. Here’s the process from start to finish:

🌱 1. Harvest & prepare
I used fresh mullein leaves. Dried leaves can also be used. Make sure your leaves are clean and free of excess moisture.

✂️ 2. Chop the leaves
Cut the leaves into smaller pieces to help expose more of the plant material.

🍾 3. Cover with vodka
Place the chopped leaves into a clean glass jar and completely cover them with vodka. Make sure the plant material stays submerged.

🔄 4. Let it steep
Secure the lid and store the jar away from direct sunlight. Give it a good shake every couple of days.

⏳ 5. Six weeks later…
After about 6 weeks, it’s time to strain!

I strained mine through a stainless-steel strainer lined with coffee filters. Cheesecloth is another option. Mullein can be very fine and fuzzy, so filtering well helps remove those little hairs and plant particles.

🧴 6. Bottle it up
I poured the finished tincture into amber glass dropper bottles to help protect it from light.

🏷️ 7. LABEL IT!
I always write the herb name and the date on my bottles. Future-you will be glad you did! 😉

🌿 And there you have it — homemade mullein tincture, ready to store.

Always properly identify any wild herb before harvesting or using it, and research appropriate preparations and safety for your individual situation.

🕰️ How long does it last?
A properly prepared alcohol-based tincture can have a shelf life of several years when stored in a tightly sealed amber glass bottle, away from heat and direct sunlight. Always check for changes in appearance, smell, or signs of contamination before use.
