GARLIC BUTTER STEAK BITES AND MASH

Ingredients:

For the Garlic Butter Steak Bites:

1 1/2 lbs sirloin steak, cut into bite-sized pieces
4 cloves garlic, minced
3 tablespoons unsalted butter
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
For the Mashed Potatoes:

2 lbs potatoes, peeled and cubed
1/2 cup milk
1/4 cup unsalted butter
Salt and pepper to taste

Directions:

Step 1: Prepare the Mashed Potatoes

Bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
Add the milk and butter to the pot with the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

Ingredients:
For the cake:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup fresh blueberries
For the cheesecake swirl:
- 8 oz (226g) cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract

Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a separate large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
4. Gradually mix in the dry ingredients, alternating with sour cream, until just combined. Gently fold in the fresh blueberries.
5. In another bowl, beat cream cheese and sugar until smooth. Add egg and vanilla extract, mixing until well combined.
6. Pour half of the cake batter into the prepared pan. Spoon half of the cream cheese mixture on top. Repeat with the remaining batter and cream cheese mixture.
7. Use a knife to swirl the cream cheese mixture into the cake batter.
8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Dry Pancake Mix Ingredients:
4 cups all-purpose flour
2 tablespoons baking powder
3 tablespoons granulated sugar
1 teaspoon kosher salt

When You’re Ready To Make The Pancakes:
1 cup dry pancake mix made with the ingredients above
1 egg medium or large
1 cup whole milk warm
2 tablespoons unsalted butter melted
1 teaspoon vanilla extract

Instructions:
To Make The Dry Pancake Mix:
Combine the all-purpose flour, baking powder, granulated sugar, and salt in a large bowl.

Whisk the ingredients together until they are well combined.

Store your pancake mix in an airtight container in a cool, dry place. It should stay good for up to three months.

Make The Pancakes:
Combine 1 cup of the dry pancake mix with the egg, warm milk, melted butter, and vanilla extract in a large bowl.

Stir until the ingredients are just combined. It’s okay if the batter has a few lumps – overmixing can lead to tough pancakes.

Preheat your griddle or skillet over medium heat and lightly grease it.

The BEST Crab Bisque

Ingredients:

3 tbsp butter
1 medium onion, finely chopped
2 stalks celery, finely chopped
Kosher salt, to taste
Freshly ground black pepper, to taste
1 tsp Old Bay seasoning
2 cloves garlic, minced
2 tbsp tomato paste
3 tbsp all-purpose flour
4 cups fish stock (or low-sodium vegetable broth)
1 cup dry white wine
1 bay leaf
1/2 cup heavy cream
1 lb lump crab meat
Freshly chopped parsley, for garnish

Directions:

1️⃣ Prepare the Base:
In a large, heavy pot over medium heat, melt the butter. Add the onion and celery, cooking until softened, about 5 minutes. Season with salt, pepper, and Old Bay seasoning.
Stir in minced garlic and tomato paste, cooking until the garlic is fragrant and the vegetables are well-coated, about 2 minutes.

2️⃣ Thicken the Bisque:
Sprinkle flour over the vegetables, stirring constantly until the flour is fully absorbed, about 1 minute.

3️⃣ Simmer the Soup:
Gradually pour in the fish stock and white wine, and add the bay leaf. Reduce heat and simmer for about 30 minutes, allowing the liquid to reduce and the flavors to blend, stirring occasionally.

4️⃣ Blend the Bisque:
Remove the bay leaf. Use an immersion blender to purée the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender, blend until smooth, and then return to the pot.

5️⃣ Finish the Bisque:
Return the pot to medium-low heat. Stir in the heavy cream and half of the crab meat. Heat until just warmed through, about 5 minutes.

6️⃣ Serve:
Ladle the bisque into bowls. Garnish each serving with the remaining crab meat and freshly chopped parsley. Adjust seasoning to taste.

Pistachio Lemon Breakfast Bread 🍋💚

Ingredients:
1 1/2 cups all-purpose flour
1 cup shelled pistachios, finely chopped
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
1/2 cup vegetable oil
1/2 cup plain yogurt
1/4 cup milk
1 teaspoon vanilla extract
Zest of 1 lemon
Directions:

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
In a large bowl, whisk together the flour, chopped pistachios, sugar, baking powder, baking soda, and salt.
In another bowl, beat the eggs, then add the vegetable oil, yogurt, milk, vanilla extract, and lemon zest. Mix until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Homemade Orange Sauce

Recipe👇
1 cup orange Juice
1/4 cup sugar
1/4 cup brown sugar
2 tablespoons rice vinegar
1/4 cup soy sauce
1 tablespoon fresh ginger minced
2 cloves garlic finely diced
1 teaspoon red pepper flakes
1 orange zested
1 tablespoon cornstarch

instructions
Add orange juice, white and brown sugar, rice vinegar, soy sauce, ginger, garlic, and red chili flakes to a medium saucepan. Stir and cook for 3 minutes over medium heat.

Whisk one tablespoon of cornstarch with 2 tablespoons of water to form a slurry in a small bowl. The cornstarch should be fully dissolved.

Add the slurry to the orange sauce and whisk together. Continue to cook for 5 minutes until the mixture begins to thicken.

Once the sauce is thickened, remove from heat and stir in orange zest.

Transfer the sauce in an airtight jar or container once cooled down. Store in the fridge for 1 to 2 weeks, or in the freezer for 2 to 3 month.

Orange Chicken Recipe

Ingredients:
4 Boneless Skinless Chicken Breasts cut into bite-size pieces
3 Eggs whisked
1/3 cup Cornstarch
1/3 cup Flour
Salt
Oil for frying
1 cup homemade orange sauce

Garnish:
Green Onions
Sesame seeds

Instructions
To make chicken:
Place flour and cornstarch in a shallow dish. Add a generous pinch of salt. Mix.

Whisk eggs in shallow dish.
Dip chicken pieces in egg mixture and then flour mixture. Place on plate.

Heat 2 -3 inches of oil in a heavy-bottomed pot over medium-high heat. Using a thermometer, watch for it to reach 350 degrees.

Working in batches, cook several chicken pieces at a time. Cook for 2 - 3 minutes, turning often until golden brown. Place chicken on a paper-towel-lined plate. Repeat.

Toss chicken with orange sauce. You may reserve some of the sauce to place on rice. Serve it with a sprinkling of green onion and orange zest, if so desired.

Ingredients:
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips, melted and slightly cooled
- 1 cup fresh strawberries, pureed
- 2 tablespoons granulated sugar

Instructions:
1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
3. In a large mixing bowl, beat the cream cheese and 1 cup of sugar until smooth and creamy.
4. Add the vanilla extract and mix well.
5. Add the eggs, one at a time, beating well after each addition.
6. Blend in the sour cream and heavy cream until the mixture is smooth.
7. Stir in the melted chocolate until fully incorporated.
8. Pour half of the cheesecake batter over the crust in the springform pan.
9. In a small bowl, mix the strawberry puree with 2 tablespoons of sugar.
10. Spoon the strawberry mixture over the batter in small dollops.

Homemade Teriyaki Sauce

You’ll need:
1/2 cup soy sauce
1/4 cup brown sugar
1 1/2 teaspoons fresh ginger ,minced
1 teaspoon garlic ,minced
1 tablespoon honey or sweetener of choice
1 teaspoon sesame oil
3 tablespoons mirin
1/4 cup water mixed with 3 teaspoons cornstarch

INSTRUCTIONS
Combine all ingredients in a small saucepan, bring to a boil, reduce heat and simmer for about 4 minutes. Remove from heat and let cool.

Store in the fridge for up to a week. Makes about 1 1/4 cups teriyaki sauce.

Chicken Teriyaki

Recipe👇
¾ lb chicken thigh - or chicken breast
1 Tablespoon vegetable oil
1 Tablespoon sesame seeds
Teriyaki sauce

Instruction:
Prep chicken: Flatten the chicken so it's about ¾ inch thick for even cooking.

Cook Chicken (Grill, Pan fry, or Bake)
Grill or Pan fry: Heat your grill or pan over medium high heat and add the oil. Cook skin-side down if using skin-on chicken and flip when golden brown.

During the last 3 minutes, add your desired amount of the teriyaki sauce. It will reduce and thicken into a glaze as the chicken cooks. Internal temperature should register 165°F and juices should run clear.

(Optional) Bake: Preheat oven to 400°F and line a baking pan. Bake chicken for about 20 until fully cooked, brushing on the teriyaki sauce a few times during the last 5 to 7 minutes. The sauce will thicken into a glaze. Reduce the heat if it starts to burn.

Serve
Cut the chicken into bite sized pieces and serve over steamed rice. Sprinkle with sesame seeds and spoon any remaining glaze over the chicken. Enjoy!

Creamy White Sauces Recipe

Mushroom sauce:
In a pan, melts butter and sauté the onions. Add sliced mushrooms and saute for 2 minutes. Then sprinkle the flour and mix well. Pour the beef broth. Mix till combined and let it boils. Keep stirring till creamy.

Alfredo Sauce:
In a pan, melts the butter and saute the garlic till fragrant. Add heavy cream and let it bubbles. Add parmesan chese and mix well. Ready to serve on top of your pasta.

Carbonara Sauce:
2 tsp olive oil
3 cloves minced garlie
2 egg yolks
2 eggs
1/2 heavy cream
1 cup grated Parmesan cheese
1/4 tsp black pepper

**Add ins: spaghetti or pasta of choice-cooked according to package and smoked bacon or sausage.

Steps:
In a pan, heat oil and saute garlic till fragrant. Set aside.
In a bowl, whisk egg yolks, eggs, cream and Parmesan cheese. Season with black pepper.

Add the egg and cream mixture into to pan with garlic. Whisk in medium heat till thickens. Pour it on warm pasta or spaghetti. Combine and garnish with extra Parmesan cheese if needed.

Roasted Beets and Carrots Salad with Burrata

Ingredients:

For the Salad:

3 red beets, trimmed and peeled
3 golden beets, trimmed and peeled
6 carrots, halved lengthwise
Olive oil
Salt, to taste
Burrata cheese
For the Dressing:

3 tbsp olive oil
2 tbsp white wine vinegar
1 tbsp honey
1 garlic clove, minced
1 tsp fresh rosemary, finely chopped
Salt, to taste
Instructions:

Preheat Oven:
Preheat your oven to 400°F (200°C).

Prepare Vegetables:
Cut the beets into wedges and toss with olive oil and salt. Arrange the beets and carrots on a baking sheet in a single layer. Roast for 30 minutes, or until tender and caramelized.

Sauté Beet Greens:
While the vegetables are roasting, quickly sauté the beet greens in a pan with a little olive oil until wilted. Set aside.

Make the Dressing:
In a small bowl, whisk together olive oil, white wine vinegar, honey, minced garlic, rosemary, and a pinch of salt.

Assemble the Salad:
Once the vegetables are done roasting, let them cool slightly. Combine the roasted beets and carrots with the sautéed beet greens. Top with burrata cheese.
