We chose Christmas Day so our wedding anniversary would always be extra special. We rented a cabin for a month in North Lake Tahoe, away from all the busyness and crowds found in South Lake. We wanted quiet, forested, and tranquil. Of course, only a handful of people could get away from the normal hustle and bustle of Christmas with work and family obligations, too. But man, the one's who showed up, showed up big.

We hired a preacher for $125. He must have been nearly 90 years old. He was kind and generous and we loved the words he shared. We didn't rent a hall or pay for the privilege of getting married at Squaw Valley Ski Resort...we just found an unoccupied fire pit and had a wedding. I wore a white ski outfit and Clark wore his black one. My mom made a bouquet.

It was amazing. And perfect. And memorable. After exchanging vows we went to a bar in the ski village and made toasts. Then back to the cabin for a gift exchange and Christmas dinner...

Christmas is special for so many reasons (Jesus being born is the biggie) but I also married my best friend.

Our circle of gift-giving may be small, but that allows us to focus more on heartfelt, handmade gifts. This year that includes some winter treats like brownie mix, hot Cocoa, spiced pecans and walnuts, aged vanilla extract, and sugar scrubs. It's not only fun to gift things you made yourself, but it's fun to make them as well. Merry Christmas Eve!

Cinnabun Coffee Cake!

I made this using my bread machine to mix the dough and go through it's rise. Then I baked it in the oven. I made a video of the entire process. It includes how I make my own brown sugar and powdered sugar. These are both simple to make and allows you to use better ingredients without spending more money. The coffee cake tastes like you favorite cinnamon rolls without the hassle of rolling the out and cutting them.

Holiday thrift store haul...

Today I dropped of 10 boxes to the Methodist Thrift Store in our small town. I've been purging and filling boxes for 6 months and it was time to drop stuff off. Especially since there were lots of things that were new and would make great Christmas presents.

Of course, I HAD to go in and see if there was anything I needed and boy, did I score! I did also quickly check the Salvation Army Store. And before anyone says anything. Ive been in there 100's of times and witnessed extreme generosity from the staff to include outfitting homeless folks with outfits. They've given away socks, coats, underroos, gloves, and hats at no charge to those in need. So, I will continue to support our local store.

Anyhoo...today's includes:

*A Roshco Clay Baker
*A Rio Hondo Ceramic Horse (1940'S)
*A hand embroidered linen table covering
*An adorable hand painter cotton flour sack towel with a KITTEN!
*Eight Linen and Lace napkins ($3 for ALL)
*A wooden Reindeer basket (the mouse is from a previous thrift store haul from a few years ago)

I spent less than $14.

Happy and I got in a quick hike (1 hour) this morning at Sand Canyon. Ever since our other dog, Benny, tore his CCL, had surgery, and spent 12 weeks recovering, Happy's activity has suffered. But, he has shown us time and again that he MUST burn off energy. Or else! πŸ˜‚

So, adding in daily walks/hikes with Happy is another one of those priorities I was talking about in a previous post. The good news is, I'll be getting more exercise. The bad news is, I'm not young!

1-4: it's not always easy to take selfies with your dog. At least one of us is going to look goofy.

5-6: Winter in the desert is magical. We found a Pinion Pine who had some branches trimmed. You can see the pitch or resin the tree exuded to heal the wound. Never disturb that.

7-9 Pinion Pine cones are really small, but inside, you'll find more magic...Pine nuts! A super food!

10- We live in a Pinion and Juniper Forest. So, yeah, you might drive by and see just a desert, but it is a legit forest. This is an old, dead Juniper tree (not cedar). It's twisted and gorgeous. You'll see a lot of this twisting in the Sedona AZ area where people say there are vortexes (or vortices)...places of energy and healing. I could be wrong, but I feel like we have them here, too.

11- Happy has a way of looking majestic and maybe even intimidating. We're pretty sure he has Anatolian Shepherd in him. He's a rezdog, so anything (literally) is possible. In reality, Happy is pretty dang goofy. His nickname is Doinks...as if "Happy" didn't already ruin his tough guy image.

12-13: We came across another Pinion Pine that had a natural wound. A small branch had broken off, and the resin had filled in the wound, but some dripped down the trunk. If a person was going to gather resin for making medicine, this is what you'd look for...the excess that is nowhere near the wound. Some had even dropped on the ground. **I took photos and put the resin back on the ground. Always be sure you check the public land rules before taking anything with you!!"

14- I'm 100% in to barefoot shoes. These are my new Alpine I splurged on during their BFCM sales.

You guys know how much I love to bake bread, right? If you bake, too, you've probably been a little frustrated with the whole slicing part. Especially if your goal of making homemade bread has been to replace store bought bread for sandwiches and toast.

I've tried dozens of bread knives and several slicing guides (those contraptions that have "teeth" to hold your knife to slice a predetermined thickness). Inevitably, my slices were uneven, with one side being too thin and the other too thick. It's a game changer. And boy, do i wish I had this when I was slicing samples at the Farmer's Market and for my Sourdough classes!
