Our 36th state was Indiana. Even though we just passed through a small portion of it, we found a story of inspiration, courage and resilience. Carlos came to the United States from Spain more than 40 years ago, after marring an American woman who was visiting Spain. He decided to create a restaurant that could represent the wonderful gastronomy of his country. Little did he know that people were taking bets on how long a Spanish restaurant would last in Valparaiso, Indiana. Despite the odds and having to explain the difference between Spanish and Mexican food to many of his customers, Don Quijote has been open for 35 years. Carlos is determined to succeed when others tell him that he can't, not only has he introduced Spanish cuisine to the community, for 30 years he has fought against hunger. It is his mission to feed the hungry (specially children) and create awareness of the hunger issues that his community faces.
