Before I work on the pineapples, I'm going to tackle a batch of Tomato Jam! 🍅 Cousin Kylee and a sweet customer on my husband's route gave us just enough tomatoes for a batch.

The crazy thing is that this starts with more than 5 pounds of tomatoes, plus sugar and seasonings, and after cooking down for hours... I'll only end up with about FOUR half-pints of jam! 😮

Tomatoes are mostly water, so they cook down a LOT.

I'll have a couple of small jars available at market next week, but if Tomato Jam is your favorite, you might want to come early because this batch is going to disappear FAST.

And a reminder... if your garden blesses you with more tomatoes, peppers, cucumbers, fruit, or other produce than you can use, don't let it go to waste! Bring it to me, and I'll turn it into something delicious. I'll even share some of the finished product with you!

Hubby already fired up the grill and has a marinated pork loin cooking while I prep these veggies!

I am definitely on an Onion Seasoning kick lately. It's so good on potatoes, carrots, roasted veggies, chicken, avocado toast, scrambled eggs... just about everything.

THIS is how we do breakfast while roadtriping at the beach! This was a neat morning because we got to witness multiple water spouts in the distance. Amazing!
