Paneer Cheesecake Recipe

Ingredients:
• 2 liters full-fat milk
• 2 tbsp vinegar (for curdling)
• Water (for rinsing paneer)
• 1 cup Greek yogurt
• 4 tbsp powdered sugar (adjust to taste)
• 1 tsp vanilla extract
• 1 tbsp cornstarch
• 1 tbsp lime juice

Method:
1. Make the Paneer:
• Boil 2 liters of milk in a heavy-bottomed pan.
• Once it comes to a boil, add 2 tbsp vinegar while stirring gently until the milk curdles and separates into whey and curds.
• Strain through a cheesecloth and rinse with a little room temperature water to remove the vinegar taste.
• Squeeze out excess water and let the paneer rest for a few minutes.
2. Prepare the Cheesecake Mixture:
• Transfer the prepared paneer to a food processor.
• Add 1 cup Greek yogurt, 4 tbsp powdered sugar, 1 tsp vanilla extract, 1 tbsp cornstarch, and 1 tbsp lime juice.
• Blend until smooth and creamy, without lumps.
3. Bake the Cheesecake:
• Line a bread baking pan with parchment paper.
• Pour in the cheesecake mixture and smooth out the top.
• Bake in a preheated oven at 175°C (350°F) for 50 minutes, until the edges are set but the center is slightly wobbly.
4. Chill and Set:
• Allow the cheesecake to cool to room temperature.
• Refrigerate for at least 4 hours (or overnight) to firm up.
5. Serve:
• Slice and serve plain, or top with fresh fruits, fruit compote, or a drizzle of honey.

Kaju Katli Recipe - Rakhi Special

Ingredients:
• Cashews – 200 grams
• Sugar – ½ cup
• Water – ¼ cup
• Ghee – ½ teaspoon (plus extra for greasing)
• Silver varak – optional



Instructions:
1. Prepare Cashew Powder
• Grind 200 grams of cashews into a fine powder. Make sure not to over-grind, or it may turn oily.
2. Make Sugar Syrup (Chashni)
• In a pan, combine ½ cup sugar with ¼ cup water.
• Heat on medium flame until it reaches one-string consistency (when a drop between your fingers forms a single thread when pulled apart).
3. Add Cashew Powder
• Lower the flame and gradually add the cashew powder to the syrup.
• Stir continuously to avoid lumps and ensure a smooth mixture.
4. Cook the Mixture
• Keep mixing until the mixture thickens and starts leaving the sides of the pan.
• Add ½ teaspoon ghee and mix well.
• Turn off the heat.
5. Shape the Katli
• Grease a plate or platform with ghee and transfer the mixture onto it.
• Use a spatula to mix and slightly knead it while it’s still warm.
• Once it forms a dough-like consistency, place parchment paper on top and roll it out evenly.
6. Finish and Cut
• Apply silver varak if using.
• Cut into diamond shapes using a sharp knife or cutter.
