HIGH-PROTEIN BBQ CHICKEN SALAD

This is one of those salads that doesn't feel like you're eating a salad. 🤤

Tender shredded chicken is tossed in sugar-free BBQ sauce, then combined with crisp romaine lettuce, sweet corn, black beans, juicy cherry tomatoes, red onion, and a little reduced-fat cheddar cheese for the perfect balance of flavor and texture.

To keep it high in protein, I made a creamy BBQ dressing using cottage cheese, Greek yogurt, and a splash of BBQ sauce. It adds a rich, smoky flavor without all the extra calories you'd get from a traditional dressing.

Every bite is loaded with smoky BBQ chicken, crunchy veggies, creamy dressing, and plenty of protein to keep you full for hours.

To make it, combine 3 cups shredded chicken breast tossed with 2 tablespoons sugar-free BBQ sauce, 3 cups chopped romaine lettuce, ½ cup black beans, ½ cup corn, 1 cup halved cherry tomatoes, ¼ cup diced red onion, and ½ cup reduced-fat cheddar cheese.

For the dressing, blend 1 cup cottage cheese, ½ cup plain Greek yogurt, 1 tablespoon sugar-free BBQ sauce, 1 tablespoon lime juice, garlic powder, salt, and pepper until smooth and creamy.

Pour the dressing over the salad and toss until everything is coated.

The result is smoky, creamy, crunchy, and packed with protein. It's one of my favorite healthy lunches because it tastes like summer BBQ in a bowl. 😍

🔥 HIGH-PROTEIN BUFFALO RANCH CHICKEN BOWL 🔥

I swear this bowl tastes like something you'd order from a restaurant.

I tossed chicken breast with Buffalo sauce, garlic powder, paprika, and a little ranch seasoning, then cooked it until golden and slightly charred.

Then I loaded a big glass bowl with jasmine rice, cucumbers, cherry tomatoes, red onion, shredded cheddar cheese, and creamy cottage cheese for an extra protein boost.

For the sauce, I mixed plain Greek yogurt, ranch seasoning, lemon juice, and a splash of water until smooth and drizzled it all over the top.

The combination of spicy Buffalo chicken, cool ranch, crunchy veggies, and creamy cottage cheese is SO good.

This came out to around 50g+ protein and kept me full for hours. 💪🤤

Y’all… this came out PERFECT and was so delicious! 😍

For a 32 oz batch in the Ninja Slushi, I used:
🍋 8 oz Deep Eddy Lemon Vodka
🍊 2 oz Triple Sec
🍋 4 oz lemon juice
🍯 4 oz simple syrup
💧 14 oz cold water

One thing I learned: if it doesn’t start slushing right away, just add a little more water and let it keep going. Alcohol doesn’t freeze as easily, so sometimes it needs a little extra dilution.

This one was the perfect balance of sweet, tart, and refreshing. Definitely making it again! 🍸✨
