📜 Recipe: Low-Carb Pepperoni Pizza Crisps

Ingredients:

1½ cups shredded mozzarella cheese

20–24 slices of pepperoni

1 tsp Italian seasoning or dried oregano

Optional: crushed red pepper flakes

Instructions:

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Place small mounds of shredded mozzarella (1–1.5 tbsp each) onto the sheet, leaving space in between.

3. Top each cheese circle with a slice of pepperoni. Lightly sprinkle Italian seasoning.

4. Bake for 8–10 minutes or until cheese edges turn golden and crisp. Let cool for 2–3 minutes to set.

5. Serve warm or at room temp. Great for keto snacks, party trays, or game-day appetizers

I am tired of Salty Dough from the store!

Nothing can compare with homemade pizza dough

For Pizza dough recipe:
• 1 teaspoon yeast
• 1 teaspoon sugar
• 3/4 cup warm water
• 2 cups all-purpose flour
• 2 tablespoons oil
• 1/2 teaspoon salt

Steps:
In a bowl, combine the active dry yeast, sugar, and warm water. Stir gently and let it sit for about 5 minutes until the mixture becomes frothy.
In a mixing bowl, combine the all-purpose flour and salt.
Add the yeast mixture and olive oil into the well and stir together with a spoon until the dough starts to come together.
Transfer dough to a lightly floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
Place the dough in a greased bowl and cover it with a clean kitchen towel. Let it rise in a warm place until it doubles in size.
Once the dough has risen, punch it down to release any air bubbles. If you want thin crust, divide the dough into 2. If you want, thick crust, use the entire dough.
Roll out the dough on a floured surface into my desired thickness.
Transfer the dough to a baking sheet with parchment paper.
Preheat the oven to 425°F and let the dough rest for about 15 minutes.
Add your favorite pizza toppings and bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted.

Pineapple Bread Rolls

Dough RECIPE:
1 cup warm milk
1/3 cup sugar
1/2 cup salted butter -melted
1 tbsp yeast
3 1/2 cup flour
2 eggs
Eggwash for brushing ( separate 1 egg yolk plus 1 tbsp water)

Steps:
In a bowl, add sugar, yeast, then pour warm milk. Mix and let it sit for 5 minutes till it bubbles. Add eggs, melted butter, then mix. Add flour gradually, mix. Let it rise for 1 hr or doubling its size. Divide dough into 20 parts. Flatten its dough at add 1 tbsp filling. Roll the dough like a Spanish bread, then slice in the top part to make it look nice and pretty. Let it rest and double it size. Brush with the egg mixture.

Bake at 330F for 15-20 minutes till golden brown. Enjoy.

Egg and bacon pie. I think this is my kids’ favorite meal to be honest. It also happens to be easy to make.

You can probably just decipher the recipe from the pics but here the info:

8 eggs
1 onion
8 streaky bacon rashers
2 sheets puff pastry
1/2 cup cheese
Pepper

Dice and cook the bacon and onion.

Whisk the eggs. Reserve a small amount of egg for an egg wash. Add pepper and cheese.

Oil a round cake pan. Add the first sheet of puff and mould to shape.

Add the bacon and onion to the eggs and combine. Pour into the pastry/pan.

Cover with the second sheet of puff and press edges closed. Cut off excess pastry and make a pretty design if you want.

Use set aside egg to egg wash the pie. Bake for 25 minutes at 200.

Let cool slightly in pan before turning out and slicing. Can be served hot or cold.
