Lemon Garlic Shrimp Alfredo 🍋🦐🍝✨

Creamy, comforting alfredo with a fresh lemon twist. Juicy garlic butter shrimp over silky lemon Parmesan pappardelle. The pasta dinner that feels restaurant-worthy but comes together in 30 minutes 🤤

🛒 Ingredients
Shrimp:
* 200g shrimp, peeled and deveined
* 2 tbsp butter
* 2 garlic cloves, minced
* Salt & black pepper
* ½ tsp paprika
* Zest of ½ lemon
* 1 tsp honey (optional, for gloss)
Pasta & Sauce:
* 200g pappardelle (or pasta of choice)
* 2 tbsp butter
* 3 garlic cloves, minced
* 250ml heavy cream
* 3 tbsp freshly grated Parmesan
* 50–100ml reserved pasta water
* Zest of ½ lemon
* 1–2 tsp lemon juice
* Salt & black pepper
* Chili flakes (optional)

👩‍🍳 Directions
1. Bring a pot of salted water to a boil and cook pasta until al dente, reserving pasta water before draining
2. Pat shrimp dry and season with salt, pepper, paprika, lemon zest, and honey
3. Melt 2 tbsp butter in a large pan over medium heat and cook shrimp for 60–90 seconds per side until pink and lightly golden
4. Add minced garlic and toss for 20–30 seconds, then remove and set aside
5. In the same pan melt 2 tbsp butter and add garlic, cooking for 30 seconds without browning
6. Pour in heavy cream and simmer gently for 2–3 minutes
7. Stir in Parmesan, salt, and pepper, then add pasta water, lemon zest, and lemon juice
8. Taste and adjust seasoning
9. Toss pasta in the sauce until creamy and glossy
10. Plate the pasta and top with the shrimp
11. Finish with extra lemon zest, fresh parsley, and black pepper

Crispy Air Fryer Salmon Bites Bowl 🍣🥑✨

The easiest salmon bowl you’ll ever make. Juicy marinated salmon bites air fried until crispy, served over rice with pickled veggies, avocado, and a drizzle of spicy mayo. Quick, fresh, and absolutely addictive 🤤

🛒 Ingredients
Salmon Marinade:
* 1 lb salmon, cut into bites
* ½ cup low sodium soy sauce
* 1 tbsp rice vinegar
* 1 tsp honey
* 2 tsp sriracha
* Paprika, salt & black pepper to taste
* Ginger garlic paste to taste
* 1 tsp sesame oil
Spicy Mayo:
* Kewpie mayo
* Sriracha to taste
Bowl Toppings:
* Cooked rice
* Pickled cucumbers
* Pickled or shredded carrots
* Edamame
* Avocado, sliced
* Chili flakes
* Sesame seeds

👩‍🍳 Directions
1. Mix all marinade ingredients together in a bowl
2. Add salmon bites and toss to coat, then marinate for at least 15 minutes
3. Air fry at 400°F for 6–7 minutes until crispy on the outside and cooked through
4. Mix kewpie mayo and sriracha together for the spicy mayo sauce
5. Plate rice and top with salmon bites, pickled cucumbers, carrots, edamame, and avocado
6. Drizzle with spicy mayo and finish with chili flakes and sesame seeds

Serves 2–3

ingredients:
3/4 cup plain Greek yogurt (180 ml)
1.7 oz. / 50 g light cream cheese
1 egg
optional: 2 tablespoons vanilla protein powder
2 - 3 teaspoons maple syrup, to taste
1/4 teaspoon lemon zest
1/2 teaspoon vanilla extract

for topping:
handful of blueberries

1. Add all the ingredients into a bowl and whisk until creamy
2. Pour into a ramekin. Top with blueberries. If you are meal prepping this for more than two days, I recommend leaving out the berries from the cheesecake and just adding them as a topping just before serving.
3. Bake at 180 Celsius / 350 Fahrenheit for about 40 minutes. Let cool down and refrigerate for 1 hour or overnight and enjoy!

Meatballs:▪️1 Tbsp Olive Oil▪️1 Yellow Onion, finely chopped▪️3 Garlic Cloves, finely chopped▪️2 lbs Ground Chicken (93/7 or similar; not ground breast)▪️3/4 Cup Grated Parmesan▪️2/3 Cup Whole Milk Ricotta▪️1 Cup Panko Breadcrumbs▪️1+1/2 tsp Kosher Salt▪️2 tsp Freshly Ground Black Pepper▪️1 Large Egg▪️1/2 Cup Chopped Fresh Parsley▪️

For Serving:▪️1 to 2 Jars Marinara Sauce▪️Freshly Grated Parmesan▪️

1️⃣ Preheat the oven to 400°F and line 2 baking sheets with parchment paper.
2️⃣ In a medium skillet over medium heat, heat the olive oil until shimmering. Add the onion and garlic and cook for 5 to 7 mins, until the onion is translucent and softened. Set aside to cool slightly.
3️⃣ Add the ground chicken, onion mixture, parmesan, ricotta, breadcrumbs, salt, pepper, egg, and parsley to a large mixing bowl. Mix until just combined, being careful not to over-mix.
4️⃣ Using a 3 Tbsp cooking scoop or your hands, form into meatballs that are about 2-inches in diameter, and place on the parchment-lined baking sheets with a little space in between each.
5️⃣ Bake for 25 mins, or until the internal temp reaches 165F and the meatballs and lightly golden. Optional: Broil each sheet pan for 2-3 mins at the end to get the tops of the meatballs extra golden brown.
6️⃣ Heat the marinara sauce in a large skillet or pot over medium-low heat, then add the meatballs. Serve topped with freshly grated parmesan and enjoy!

Note: These freeze great! Let the meatballs cool completely, then freeze them before adding to the sauce in a freezer-safe bag or container. You can microwave them directly from frozen for an easy meal later on.

15 min prep time / 40 min total time

Serves 6-8 (makes ~26 meatballs)

Mom’s sheet pan Benihana fried rice✨

Fried Rice:▪️3 Cups Cooked, Cooled Jasmine Rice (from 1 cup uncooked rice)▪️1/3 Cup Finely Chopped Yellow Onion▪️1/4 Cup Finely Chopped Carrot▪️2 Scallions, sliced▪️1/2 tsp Kosher Salt▪️1/4 tsp Pepper▪️1 Tbsp Soy Sauce▪️1 Tbsp Sesame Seeds▪️2 Tbsp Toasted Sesame Oil▪️2 Eggs▪️

Garlic Butter:▪️1-2 Tbsp Butter▪️1 Garlic Clove, finely chopped▪️

1️⃣ Preheat the oven to 425F and line a sheet pan with parchment paper.
2️⃣ Spread the rice in an even layer and top with the onion, carrot, salt, pepper, soy sauce, sesame seeds, and sesame oil. (Make sure to drizzle some of the sesame oil around the edges of the rice for extra crispiness.)
3️⃣ In a small bowl, combine the garlic and butter. Microwave until melted (or melt in a pan), stir, and drizzle evenly over the rice.
4️⃣ Use two spoons to make two small wells in the rice, then crack an egg into each one.
5️⃣ Bake for 15 mins, until the rice is crisp at the edges and the eggs are cooked through. Slice the eggs into small pieces with two knives, then transfer everything to a serving bowl and toss until evenly combined. Enjoy!

⏲10 minute prep time + 15 minute cook time

Recipe serves 4 as a side dish
