Cook your unripe plantain with smoked fish, cow skin (ponmo), crayfish, onions, pepper, and your favorite seasonings. Allow everything to cook together until the plantain and ponmo are nice and soft and all those delicious flavors have come together.

When I tell you this is one of the best ways I’ve ever prepared unripe plantain, apart from making plantain porridge, I mean it! The combination of the smoky fish, soft ponmo, crayfish, and well-seasoned plantain makes every bite so flavorful.
