I wanted to share the pickle recipe I use since it’s finally cucumber season šŸ„’šŸ’š
It’s super easy, and doesn’t require any canning.
Ingredients:
• 6 cups water
• 2 cups apple cider vinegar
• 1/3 cup minced onion
• 6 garlic cloves, finely minced (plus 6 extra whole cloves for the jars)
• 1 ½ teaspoons yellow mustard seed
• 2 tablespoons peppercorns
• 1/3 cup canning salt
• About 18 pickling cucumbers
• 6 heads fresh dill or 4 ½ teaspoons dried dill seed
• 6 bay leaves (one per jar)
Instructions:
1. Soak the cucumbers in ice water while you cut them to your desired size (spears or slices). I’ve even done whole pickles with the mini ones.
2. Prepare six clean quart jars. Place a bay leaf, fresh dill, and one whole garlic clove at the bottom of each jar. If you want them spicy you can add jalapeƱo or red pepper flakes as well.
3. In a large saucepan, combine water, apple cider vinegar, minced onion, minced garlic, mustard seed, peppercorn, canning salt, and dill (if using dried dill not fresh). Bring the mixture to a rapid boil, then cook until the salt has fully dissolved.
4. Remove from heat and let the brine cool to room temperature.
5. Fill each jar with the cut cucumbers.
6. Pour the cooled brine over the cucumbers in the jars until they are fully submerged.
7. Let the jars sit on the counter at room temperature for 24 hours.
8. After 24 hours, refrigerate the jars.
These pickles will stay crunchy for up to 3-5 months unopened in the fridge. The kids and I love these I always end up making about 24-36 jars a year of them.

In fact, every part of the dandelion can be consumed and have amazing benefits, all the way from it's roots to it's flower.
They have an abundance source of nutrients that our bodies need.
Dandelions are high in vitamin K, vitamin C, and vitamin B6. (Vitamin K- If you are on blood-thinning medicine, speak with your doctor before consuming dandelions)
Dandelions contain a lot of iron which helps support healthy red blood cells.
Dandelions also contain a lot of potassium, which helps regulate our heartbeat and blood pressure.
Dandelions also offer folate, magnesium and copper.
Dandelions are immune system boosters.
Dandelions can help balance our blood sugar levels, relieve heartburn, and even soothe common digestive issues.
Dandelions can be eaten raw, and they won't lose any of their vitamins or nutrients even when you cook them! What?! How many foods do you know, do that?
Don’t just get rid of them, You can make all kinds of things: tea, salads, soup broths, dandelion jelly, dandelion bread, fritters, cookies, even deep fry them, an my FAV dandelion winešŸ˜‹
Make sure the ones you are using haven’t been sprayed an are always from dogs.

Just made Chocolate Syrup, gave 1 away & opened 1 and OMG it's better than Hershey's, I cut the recipe in half because I didn't think it would be this good so only made 3-1/2 pints and 2- 1/4 pints. Next time I will be making the whole recipe! I will post recipe if anyone wants it. Happy canning!

I made sauerkraut yesterday!! So easy 😊
Shred cabbage pack in sterile jars. I put one teaspoon of sugar and one teaspoon of salt and one teaspoon of vinegar. Filled with hot boiling water. And Water bath for 20 minutes. Let sit for 4-6 weeks and it's delicious šŸ˜‹ā¤ļø Edit, this is not the traditional fermenting sauerkraut. You do lose their probiotics by processing it. But this is a way to make sauerkraut shelf stable and it is very delicious ā¤ļøšŸ˜Š

Caramel Apple Jam 🄰

6 cups finely diced peeled Apples (4 med-large Honey Crisp apples yielded 6 cups)
1/2 cup water*
1/2 tsp. butter
1 package Sure-Jell (powdered fruit pectin)
4 cups sugar
1 cup packed brown sugar
1/2 tsp. ground cinnamon (heaping)
1/4 tsp. ground nutmeg
šŸ’„Method :
In a large stockpot, combine the apples, water, and butter. Cook and stir over low heat until apples are tender (about 10 minutes).
Stir in pectin and bring to a rolling boil, stirring constantly. Add the sugars, cinnamon and nutmeg and return to a rolling boil. Boil for 1 minute, stirring constantly.
Remove from the heat; skim off foam. Carefully ladle hot mixture into hot half-pint or pint jars, leaving 1/4-in. head-space. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling water bath.
Note - twist jars gently from side to side while cooling (after lid has sealed) to evenly distribute apple pieces throughout the jam.
Yield: 3 pints or approx. 6 half-pints
*Option: Replace 1/2 cup

🄚 Pickled Beet Eggs (With Pickling Spice) – Makes 36 Eggs
This is my second time this year making these. The first batch turned out good. I made some recipe changes and I can already tell by the taste of the broth these are going to be excellent. Cheers!
Ingredients:
36 large hard-boiled eggs, peeled
3 cans (15 oz each) sliced beets, with juice
2 medium onions, thinly sliced (optional)
3 cups apple cider vinegar (5% acidity)
1 ½ cups water
1 ¼ cups granulated sugar
1 tablespoon pickling salt
2 tablespoons pickling spice (whole blend, not ground)
½ tablespoon mustard seeds
1 teaspoon whole black peppercorns (optional – already in most pickling spice blends)
Instructions:
1. Cook and peel the eggs:
Use the Instant Pot 5-5 method: cook on high pressure for 5 minutes, let pressure naturally release for 5 minutes, then move eggs to an ice bath. (If you don’t have an instant pot then google and figure it out.) Peel and set aside.
2. Prepare the brine:
In a large pot, combine beet juice and slices, apple cider vinegar, water, sugar, pickling salt, onions, pickling spice, mustard seeds, and peppercorns.
Bring to a boil, then reduce heat and simmer for 10 minutes to infuse the flavors.
3. Pack the jars:
Divide evenly into 4 quart-size jars: place 9 eggs per jar, layering with beets and onions.
4. Pour the brine:
Carefully pour the warm brine into each jar, covering all ingredients completely.
5. Refrigerate and wait:
Seal jars and refrigerate. Let sit for at least 2 weeks before eating—1 month is ideal for full flavor and color development.
6. Storage:
Keep refrigerated at all times. These eggs are not shelf-stable and should be consumed within 3 months but I know of folks on some FB pickling groups that will keep eating them after 12 months - whatever!
