For Such a Time Homestead HI all! I'm a christ follower ,mother , and a fairly new homesteader.

My first big harvest is in the books! What a great feeling this was to come back in the house with a bunch of goodies! I’ve been harvesting herbs and a little bit of fruit here and there but this was my first .. I’ll call it “ hearty harvest” ! What a blessing! 🙏🙏🙌🙌❤️❤️

I tried a little something different with some leftover spinach from the week . I can’t stand wasting food so I’m always interested in finding ways to get creative and use up what waste I would have . I’ve heard about people making spinach sauces, dips or dressing so I tried it out and I really like it .
This is a spinach pesto style sauce to use on pasta , or maybe some salmon sauce or dip .
I’ll be honest , I eyeballed this so I don’t really have a “recipe “ but It worked well! I couldn’t fill up the whole jar since I didn’t have a ton of spinach left but this will definitely take me a plate or two.. or three .. It’s in my freezer for the moment until I know what to do with it since it has a 3 month shelf life .

Ingredients below . 👇
Fresh spinach
Half a lemon
Salt and pepper
3 cloves of garlic
Olive oil
( not pictured since I tried these last minute) :
Flour
Milk
Red wine vinegar

I met a new friend while tending to SueAnn this morning .I believe this is a green frog . They’re are awesome to have around in our gardens , they eat the insects and slugs that can be harmful to your plants, they eat mosquitoes! (YAY!!) and help invite other beneficial friends to come and pollinate.
It was a very exciting morning coming out and be greeted by them. I sure hope they stick around . ❤️💕🐸
