Aparium was in the process of building out the new Daxton Hotel & Madam Restaurant when COVID-19 forced the operation to be put on hold. And when restrictions began to be lifted, the hotel group had to experiment in creative ways, from curated pop-ups to at-home meal kits, in order to engage with guests.

Due to the pandemic and state-wide restrictions, many industry workers began testing new techniques & recipes at home, documenting them on Instagram. Once the request comments started flooding in, they decided to offer orders through DM.

"Story features on Instagram served as updated menus and a loud groan of shocked emoji reactions, or 💯s if it was your friends, hit at the inevitable sold-out update, which only drove the demand on social media even higher, creating an "if you know, you know" exclusivity that has narrated the food scene long before Instagram."

"The culinary landscape is often void of stories of how enslaved individuals transformed it. Taste of Diaspora aims to bring those narratives to life in collaboration with a collective of Black chefs, restaurants, farmers, and producers. Each week chefs will create a dish honoring that week’s cuisine of the African diaspora and both dishes will be sold together in a shoebox lunch in recognition of the food boxes used by African American travelers during the Jim Crow era."

Revenue from this initiative will benefit Black restaurants and farmers disproportionately affected by the pandemic. A percentage of shoebox lunches will also be distributed to food insecure residents at no cost.

2020 has made us realize all of the small things that we took for granted.

Just wanted to say how thankful we are for the people we’ve met, places we’ve gone to, and all of the delicious food we’ve had the pleasure of trying ❤️
