Grilled Colossal Shrimp with Chili Lime Seasoning
Ingredients (Serves 4):
• 1 lb colossal shrimp (peeled and deveined, tails on)
• 2 tbsp olive oil
• 1 tbsp chili powder
• 1 tsp lime zest
• Juice of 1 lime
• Salt and pepper to taste
• 1 cup wild rice (cooked according to package instructions)
• 2 cups broccoli florets, steamed
• 1 tbsp olive oil (for broccoli, optional)
• Salt and pepper (for seasoning)
For the Avocado Crema:
• 1 ripe avocado, pitted and peeled
• 1/2 cup sour cream or Greek yogurt
• Juice of 1 lime
• 1 garlic clove, minced
• Salt and pepper to taste
• Water (as needed for consistency)
Garnish:
• Frisée salad (or arugula, for garnish)
• Microgreens (for garnish)
Instructions:
1 Prepare Shrimp: Toss shrimp with olive oil, chili powder, lime zest, lime juice, salt, and pepper. Preheat a grill or grill pan over medium-high heat. Grill shrimp for 2-3 minutes per side until pink and cooked through. Remove and set aside.
2 Cook Wild Rice: Prepare wild rice according to package instructions. Season lightly with salt and pepper.
3 Steam Broccoli: Steam broccoli for 5-7 minutes until tender-crisp. Toss with 1 tbsp olive oil, salt, and pepper if desired.
4 Make Avocado Crema: Blend avocado, sour cream or Greek yogurt, lime juice, minced garlic, salt, and pepper until smooth. Add water, 1 tbsp at a time, to reach desired consistency.
5 Assemble & Serve: Plate wild rice, top with steamed broccoli, then grilled shrimp. Drizzle or dollop with avocado crema and garnish with frisée salad and microgreens. Serve immediately. Enjoy!
