Katie Salsbury, of Intermountain Aquatics, Inc. and Landganics - Organic W**d Control, says her latest endeavor makes her feel like a mad scientist. 🧪⁣

In a shipping container next to her house, blue and red lights glow purple. The air smells humid and warm. Trays on a counter contain tiny germinating plants, and vertical columns of leafy green lettuce, kale, and a mix of herbs grow lined up in rows. A drip runs down the columns once every hour, and leftover moisture gets recirculated into the system. 💦⁣

Cattle Creek Ranch, Teton Valley, Idaho's only hydroponic farm, uses only five gallons of water a day to grow their CSA greens. 🥬⁣

Here in the Tetons, the first signs of sweet wild berries appear in the spring. Listen for the buzz of bees and watch butterflies and hummingbirds flock to plants, taking note of where berries will arise in a few months’ time. 🌸⁣

In the past, the rugged Teton mountain area had little to offer in the way of year-round produce. According to Jana Stearns, who grew up behind the counter of Hungry Jack’s in Wilson, Wyoming, there weren’t many fresh food choices before the late 1960s. “There were a couple of heads of lettuce, bananas, and maybe a tomato.” She remembers when the first avocados arrived (probably from California) “sometime in the mid ’70s.”⁣

Today, area farmers and modern shipping have changed all that, allowing fresh produce to line the stores each winter, and giving us a way to rebuild our health after a season of overindulgence.⁣
