🥕 easy one bowl carrot cake baked oats
- 1 banana
- 1/4 cup nut butter of choice
- 1/2 cup shredded carrots
- 1 cup oats
- optional toppings: walnuts, coconut shreds, raisins
Add all ingredients to baking dish (I used my @ourplace baking dish) and mix. Bake at 375F for 20-25 minutes or until the bars are at your desired texture. Allow bars to cool completely and ENJOY!!
💡TIP: press the mixture with a spatula in the pan before baking AND right out of the oven! This will help it bake and cool in a more homogenous way!

This one-bowl, 4-ingredient carrot cake baked oatmeal bar recipe is the easiest breakfast meal prep ever!!
I love that you can just throw everything into one dish so the mess is super minimal! The ingredients are also all ones that you probably already have.
I enjoyed mine with a drizzle or maple syrup or a dollop of vanilla yogurt and it really elevated the flavor even more! If you prefer a sweeter breakfast, I recommend doing the same or baking with a few dark chocolate chips as a topping.

🥜 thai spiced peanuts
Ingredients:
- 2 cups roasted unsalted peanuts
- juice and zest of 1 small lime
- 1 tsp oil of choice
- 1 tbsp green curry powder + 1 tsp thai chili powder
- 1 tsp pink Himalayan salt (feel free to adjust to taste)
Add peanuts to pan and cook on medium-low heat while stirring for about 3 minutes.
Add oil, lime juice and zest, and spices to the peanuts. Stir for about 2 minutes until everything is well combined.
Take pan off heat and continue to stir for 1 minutes to allow peanut to cool.
ENJOY!!
