Today was a good day â˜ș

I hosted a Build Your Bowl session with a group of women curious about cooking vegan proteins. We got in the kitchen (virtually), covered some nutrition basics, and made my Crispy Tofu with Sweet Potato Purée and Bok Choy.

For most of them, it was their first time working with tofu, and they nailed it. I love watching people step outside their comfort zones and actually enjoy the process. By the end, they weren’t just eating it, they were excited to make it again.

That’s what knowledge, practice and a little encouragement can do ✹

While I eat an all-inclusive diet, I genuinely enjoy protein in many forms. Tofu isn’t just for vegans. It’s a complete protein, it’s versatile and when it’s cooked right, it checks every box: flavor, texture and nutrition.

Every time I lead these sessions, I’m reminded that real confidence in the kitchen comes from doing. When you understand how to cook something, and why it matters, you start making better choices. No extremes required.

This year’s Thanksgiving spread: Jamaican oxtails, cabbage, roasted sweet potatoes and everyone’s favorite ultimate salad bowl, plus pecan pie for dessert đŸ„— I prepped everything the night before, which gave me space to be present, move slowly and enjoy every bite. While I’m beyond grateful, I also know what it’s like not to have a warm plate or loved ones nearby.
