I was watching my girls on vacation with their grandparents, and I had one of those moments where motherhood just hits you a little differently.

They were laughing, running around, holding their grandparents’ hands… just being kids.

And I started thinking about how incredibly special this season is.

There’s this little window of time where **your children are still small enough to need their grandparents, and their grandparents are still strong enough to keep up with them.**

We always say, *“They’re growing so fast.”*

But sometimes I think we forget that everyone is growing older at the same time.

The kids will get bigger.

Their grandparents will get older.

And these exact vacations, these little hands, these ordinary family moments… they won’t always look like this.

So I don’t want to rush through it.

I want the extra hugs.

The messy vacations.

The tired kids.

The grandparents spoiling them.

The photos where nobody is looking at the camera.

Because maybe these aren’t the “little moments.”

**Maybe these are the moments we’ll wish we could have back.** 🤍

**Squash fritters 🥒✨** A simple, kid-friendly way to make squash that even picky eaters might love!

1. Boil/simmer squash until soft.
2. Drain and mash.
3. Add a little all-purpose flour.
4. Season with whatever you like — I usually keep it simple with salt + pepper.
5. Add an egg and mix everything together.
6. Scoop into a pan and fry in avocado oil until golden brown on both sides. 🤌🏼

Waterless Chicken Soup Recipe | Easy One-Pot Chicken Soup 🍲

Today I’m making waterless chicken soup! No chicken broth and no added water — just a whole chicken, vegetables, apples, and lemongrass slowly cooked together.

Ingredients:

- 1 whole chicken
- Onions
- Peeled apples
- Napa cabbage
- Lemongrass
- Salt
- Pepper
- Salt + lime for cleaning the chicken

Step-by-step:

1. Clean the whole chicken with salt and lime, then rinse well.
2. Add onions, peeled apples, and Napa cabbage to the pot.
3. Place the whole chicken into the pot and put lemongrass inside the chicken cavity.
4. Cover the pot and simmer on low. I used a large chicken, so I cooked mine for about 1 1/2 hours. If using a smaller chicken, start checking around 1 hour.
5. Make sure the chicken is fully cooked before consuming.
6. Season with salt and pepper to taste.
7. Serve warm and enjoy!
