🌶️🥔 A Unique Twist on a Classic Favorite
Enchiladas, meet sweet potatoes! This bold and comforting dish combines zesty enchilada flavors with the wholesome heartiness of roasted sweet potatoes — packed with shredded chicken, green chiles, melty cheese, and a creamy, spiced filling. 🤤✨
Quick Recipe Recap:
1️⃣ Roast sweet potatoes at 400°F until soft (45–60 mins).
2️⃣ Sauté garlic, onion & jalapeño, then add flour & broth to make a light sauce.
3️⃣ Stir in shredded chicken, green chiles, spices, sour cream & lime.
4️⃣ Split potatoes, mash insides, fill with mixture, top with cheese.
5️⃣ Broil until bubbly & golden. Top with cilantro & lime wedges!
Perfect for cozy dinners or to wow your guests with something unexpected!

🍨 What a DELECTABLE & ENTERTAINING evening with amazing friends!
We scooped up all the ice cream you could imagine, topped it with everything, and laughed the night away with Wanda Jo’s hilarious Boomer Generation Trivia game! The crowd was chuckling, cackling, and howling all night long! 😂👏
Huge thanks to our hostesses Wanda & Cindy for the creative “Sundae” décor and inviting photo backdrop, and to Cherie & Scott for the awesome sound system!

At just 2 years old, Darryl’s already living his best life after being rescued from a tough start in Houston. Now? He’s got a full house, a wild toddler sidekick, two senior dog siblings, and a mission: protect, play, and definitely hide tennis balls under every piece of furniture. 🎾
Whether he’s racing around the house, babysitting baby Isabella, or winning nightly snore-offs with Dad, Darryl keeps his family on their toes — and full of laughs.
