Want that beautiful sourdough ear and a perfectly rounded loaf? It all starts with your expansion score.

Expansion scoring is the main cut that controls where your bread expands during oven spring. Without it, your loaf may burst unpredictably in weaker spots. With a proper expansion score, you’re directing that energy exactly where you want it.

A few tips:
🥖 Hold your lame at about a 45° angle to the dough—not straight down.
🥖 Make one confident, swift cut. Slow cuts can drag the dough and create jagged edges.
🥖 Score just off-center along the length of the loaf.
🥖 The angled cut creates a flap of dough that lifts during baking, giving you that gorgeous ear and rounded top.

Think of scoring as giving your sourdough permission to rise where YOU want it to.
