In my effort of cutting sugar out of my diet, this Sugar Free Sweet Potato “Pie” is taking care of the cravings!

I saw this recipe via Keto Snackzand had to try it!

I filled 2 ramekins halfway up for two servings here, but you can fill one up and have one all to yourself! 😁

1 small sweet potato (steamed or baked)
1 large egg
3 tbsp Truvia SF Brown Sugar
1/4 cup Greek yogurt (I used Zero Sugar vanilla)
2 tsp cinnamon
1 tsp vanilla

Mix together thoroughly. Spray ramekins and fill with batter.
350° 25-30 minutes

I topped mine with sugar free whipped cream.

Out of this world IMO!! 😍😍

Spaghetti Squash never looked so good! I’ve become quite the fan! 😍

Roasted at 400° with a drizzle of olive oil and Italia Blast for about an hour. Removed the stringy flesh then mixed with sautéed mushrooms, garlic and sweet Italian sausage. Fresh chopped parsley added in last.

Topped with parm and a pinch of red pepper flakes.

So good!! 😍

Is it a ribeye? Heck no!!
Not too shabby at all though! 😍

I took a $12 chuck roast and separated the better looking section and sliced it into two steaks. I sat the remainder aside to freeze for something else later on.

Since I was dealing with chuck steaks, I decided to beat them up a bit with a tenderizer. Seasoned them up with Neil’s Sarap BBQ Tasty Sear Beef and cooked these super fast in a screaming hot cast iron skillet. 🔥

Done in no time, I took these off when they hit 135° internal. (I lift my steak up off the pan with a spatula and use a temperature probe, I admittedly stink at “feeling” for a steak’s doneness 🥴).

Topped off with compound butter for a frugal weeknight win!!

Russets, sliced into medallions. Tossed in the following:
Olive oil
Neil’s Sarap “Italian last”
Smoked Paprika
Baked for an hour at 350°.
Topped with:
Sharp cheddar
Crumbled bacon
Chives
Baked again until cheese is melted

Top with sour cream and enjoy!

A great way to enjoy butternut squash? Make a pasta sauce!

Remove seeds then peel the squash. Cut into chunks.
Spread onto a sheet pan and toss in olive oil. Add as much garlic as you wish.
Roast at 375° until tender.
Meanwhile, cook pasta (I used Cavatappi), save some pasta water and set aside.
Place cooked squash into large saucepan. Add in heavy cream (amount will be to your liking, I used about a half cup total).
Blend with immersion blender.
Season to your liking , I used salt, pepper, paprika and dried parsley. Add reserved pasta water if too thick.
Mix with pasta and enjoy!
