Blueberry Date Bars (No-Bake)
Ingredients:
Crust/Base:
-1 2/3 cups digestive biscuits
-1/2 tsp sea salt
-3 1/2 tbsp butter, melted
-5 large pitted Medjool dates
Filling:
-1 cup + 2 tbsp soaked cashews
-7 oz cream cheese
-1/3 cup Greek yogurt
-7 1/2 tsp coconut oil
-2 tbsp agave or maple syrup
-1 tbsp fresh lemon juice
-1 tsp vanilla extract
-1/4 tsp ground cinnamon
Topping:
-1 cup blueberry curd
Instructions:
-Line loaf pan with parchment. In a food processor, combine crust ingredients. Press into the pan and chill.
-Blend all filling ingredients until smooth and creamy. Pour over crust. Chill 5+ hours or overnight.
-Gently heat blueberry curd until spreadable. Spread on top of set bars. Chill 30–60 min.
