Blueberry Date Bars (No-Bake)

Ingredients:
Crust/Base:
-1 2/3 cups digestive biscuits
-1/2 tsp sea salt
-3 1/2 tbsp butter, melted
-5 large pitted Medjool dates
Filling:
-1 cup + 2 tbsp soaked cashews
-7 oz cream cheese
-1/3 cup Greek yogurt
-7 1/2 tsp coconut oil
-2 tbsp agave or maple syrup
-1 tbsp fresh lemon juice
-1 tsp vanilla extract
-1/4 tsp ground cinnamon
Topping:
-1 cup blueberry curd

Instructions:
-Line loaf pan with parchment. In a food processor, combine crust ingredients. Press into the pan and chill.
-Blend all filling ingredients until smooth and creamy. Pour over crust. Chill 5+ hours or overnight.
-Gently heat blueberry curd until spreadable. Spread on top of set bars. Chill 30–60 min.

Frozen Chocolate Banana Snickers

Ingredients:
-2 large bananas, chopped into small chunks
-1 cup dark chocolate chips, melted
-½ cup peanut butter
-⅓ cup roasted peanuts, chopped

Instructions:
-Add 1 teaspoon melted chocolate into each slot of a silicone ice-cube tray.
-Place one banana chunk into each slot.
-Add ½ teaspoon peanut butter on top.
-Sprinkle a few roasted peanuts.
-Cover with another teaspoon of melted chocolate.
-Freeze for 2–3 hours, then pop them out and enjoy.

Hazelnut Chocolate Bars (No-Bake)

Ingredients:
-170g hazelnut butter
-70g vegan protein powder
-2 tbsp cocoa powder
-2 tbsp maple syrup
-5 tbsp milk (regular or plant-based)
-40g chopped hazelnuts
-100g dark chocolate (for topping)
-2 tbsp crushed hazelnuts (for garnish)

Instructions:
-In a bowl, mix hazelnut butter, protein powder, cocoa powder, maple syrup, and milk.
-Stir in the chopped hazelnuts.
-Press the mixture firmly into a small lined tray.
-Melt the dark chocolate and spread it evenly on top.
-Sprinkle with crushed hazelnuts.
-Chill in the fridge for 1–2 hours, then slice into bars.

Pistachio Chocolate Bars(No-Bake!)

Ingredients:
-1 cup pistachio butter
-1/2 cup chopped pistachios
-2 tbsp maple syrup
-3 tbsp coconut oil
-5 oz dark chocolate (melted)
-Pinch of salt

Instructions:
-Mix pistachio butter, chopped pistachios, maple syrup, salt, and 1 tbsp coconut oil in a bowl.
-Spread the mixture into a parchment-lined container.
-Melt the dark chocolate with the remaining coconut oil.
-Pour the melted chocolate over the pistachio layer.
-Chill for 1 hour, slice, and enjoy!
