Creamy Chicken Spaghetti in Cheddar Garlic Parmesan Sauce
Ingredients:
12 oz spaghetti pasta
1 1/2 lb boneless skinless chicken breasts, cut into bite-size pieces
2 tbsp olive oil
2 tbsp unsalted butter
1 tsp garlic powder
1 tsp Italian seasoning
Salt and freshly ground black pepper, to taste
3 cloves garlic, minced
1 small onion, finely diced
2 tbsp all-purpose flour
1 cup chicken broth
2 cups heavy cream
4 oz cream cheese, cubed
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 tbsp chopped fresh parsley (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
2. Season the chicken pieces with garlic powder, Italian seasoning, salt, and pepper.
3. In a large skillet over medium-high heat, heat the olive oil and 1 tablespoon of butter. Add the chicken and cook until browned and cooked through, about 5–6 minutes. Transfer the chicken to a plate and set aside.
4. Reduce the heat to medium and add the remaining tablespoon of butter. Add the diced onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for 30 seconds.
5. Sprinkle the flour over the onion mixture and cook for 1 minute. Gradually whisk in the chicken broth and heavy cream until smooth and beginning to thicken.
6. Add the cream cheese and stir until melted. Reduce the heat to low and stir in the cheddar, Parmesan, and mozzarella cheeses until the sauce is thick and creamy.
7. Return the chicken and any accumulated juices to the skillet. Add the cooked spaghetti and toss to coat evenly in the cheesy sauce. Season with salt and pepper to taste.
8. Garnish with chopped parsley if desired and serve warm.
