When you’re hongry for freedom…

Today was the last day of our challenge with Team RWB. They said add all the color you want, and get creative. Decided to go full Merica on this one.

🇺🇸 🫡

Main course: Spaghetti with meat sauce and Romano cheese

Side: Mixed grains striped in chili with beans

Salad: Mixed greens, tossed with Caesar vinaigrette, then topped with pickled red cabbage & onions, beetroot kraut, and feta cheese.

Dessert: Pineapple chunks smothered in Greek yogurt with blueberries, topped with 13 “stars” of cottage cheese.

Vibrant Bites challenge with , day 8 - Leafy greens.

Romaine chopped and topped with a black bean and chick pea bean salad with cucumber, red onion, tomatoes, fresh mozzarella, as well as cilantro lime black rice and a medley of jasmine rice, buckwheat, barley, and quinoa.
