Keeping with the IPA vibe, I brewed up a West Coast style IPA with all Southern Hemisphere hops today.

This IPA is bright and juicy with tropical top notes (passionfruit, lime zest, pineapple), herbal citrus undertones, and a dry, clean finish with soft bitterness. Think "tropical IPA with a rustic pulse."








Ingenious Libations - Southern Starburst IPA

6 gallons - All-Grain (60min boil)
OG = 1.059
FG = 1.010
IBU = 45 SRM = 5 ABV = 6.5%

Ingredients:

10.5 lbs - Viking Pilsner
1 lb - Weyermann Vienna
0.25 lb - Rahr Six Row
0.25lb - Weyermann Acidulated Malt (mash pH adjustment)

0.50oz - Magnum @ 60 min
1 oz - Motueka @ 10 min
1 oz - Waimea @ 10 min
0.5 oz - Vic Secret @ Flameout (Hop stand for 15 min)
0.5 oz - Waimea @ Flameout (Hop stand for 15 min)
1 oz - Vic Secret Dry Hop on Day 3 for 3 days
1.5 oz - Galaxy Dry Hop on Day 3 for 3 days

Yeast: Kveik Ebbegarden

Mash In @ 152° for 60 min
Mash Out @ 168° for 10min

Oxygenate and Ferment @ 90° for three to four days or until fully attenuated.

I haven’t brewed anything since November, so I thought I’d change that. I picked up some ā­ļøStarā­ļøParty and decided to do a thiolized session IPA. This one is hopped with Trident and Cascade. The yeast aroma is amazing. Can’t wait to see the results.

Brewing up a batch of American lager for a co-worker. This grist consists of pilsner, six row, flaked corn and flaked rice. It will be hopped with mittelfruh. Should be a nice crisp every day lager. Zum wohl!

Day 1 in Denver. We hit up a few great spots. Our day started at I had a pint of their American lager and Maria had a pint of their schwarzbier. Both beers were clean and were perfect to start our day off with. Service was also great.

Our second stop ended up being I had a full pour of their helles and Maria had a London porter. Both beers were also quite enjoyable and hit the marks for style. They had quite a few different English beers available in their arsenal. Also, for the cask drinkers, they had several different beers available. I tasted their ordinary bitter and London porter on cask. Both beers were awesome.

Our third stop of the day was at I had a half liter pour of slow pour pils and Maria had their Baltic porter. Once again, beers were awesome. We were starving and pretty beat from the trip in getting here. So, we called it a day after that.

I can’t wait to check out some more spots tomorrow. We will probably hit Prost Brewing, Great Divide and Cohesion to start. Then, see where the rest of the day takes us. Zum wohl!

Our first stop on the way out to GABF in Denver: Chicago. We stopped at a couple of great breweries. The first was . I had the Honkers Ale (English Bitter) and a Oktoberfest MƤrzen. Both were excellent beers. Maria had their porter which was also excellent.

The second stop was at . I ended up having a helles (or two šŸ™‚) and their west coast American IPA. Both awesome beers. I also sampled quite a few others: Munich Dunkel, kƶlsch, American lager, Mexican lager and MƤrzen. All very well made. Zum wohl!

Brewing up a batch of English IPA today. I always look forward to brewing this one right on the verge of fall. It has a nice malty backbone, a firm bitterness and lovely nuances of orange marmalade and citrus spice from the blend of Galaxy and Ekuanot (equinox). Cheers!

One of my favorite beers (Bitburger) to enjoy. The irony is this beer takes much more skill and a refined process to make it the way it is. Lagers nowadays take a back seat to sour gummy worm IPAs with pounds of hops backloaded in the boil. Styles like that can mask so many flaws in a brewers process. Lagers, however, don’t have a place to hide flaws; your skills are front and center. That’s the main reason when I try a new brewery out, I will look specifically for pale lager on their menu. If the beer is clean, it’s probably a safe bet that their ales are at least palatable. It’s a shame a lot of people can’t enjoy a beer like this: simplicity is complexity. Zum wohl!
