Shanghai scallion oil noodles with garlic🍜😍
Because who doesn't love runny eggs and garlic? 🤤
Check out this simple yet SUCCULENT recipe 🔻🔻🔻🔻
Oil ingredients
- 5 scallions, chopped into chunks, (whites cut into thin strips, greens in half, then separate)
- 1/4 cup neutral oil
Noodle ingredients
- 2 garlic cloves (optional)
- 150g -200g of noodles (i used taiwanese sliced dried noodles)
- 3 tbsp scallion oil
- 1 tbsp light soy
- 1 tbsp dark soy
- 1/2 - 1tbsp sugar (adjust to taste)
1. Fry whites of scallions in oil on medium heat until starts to soften
2. Add green parts and fry until brown (will take a while, try not to turn heat high to burn)
3. Remove from oil and place on paper towel to get crispy
4. In same pan, add 3 tbsp oil, add minced garlic fry until fragrant
5. Add both soy sauce and sugar, fry until begins to bubble then add cooked noodles
6. Mix until combined, add to bowl then top with crispy scallions and/or egg, other proteins
