🧠 FACT: While white cane sugar is the most consistent food source for the culture, it’s not the only option — and it doesn’t end up in the final drink the way most people think.

During fermentation, the culture breaks down sucrose into glucose and fructose, which are then consumed by the yeast and bacteria. The result? A tangy, probiotic-rich beverage — not a sugar bomb.

👉 Organic cane sugar, evaporated cane juice, and even raw sugar can be used — with slight adjustments and flavor differences.

Just steer clear of sugar substitutes, honey, or artificial sweeteners (they confuse or starve the SCOBY).

Here’s the science: glucuronic acid helps your liver by binding to toxins and metabolic waste so they can be flushed from the body — a process known as glucuronidation. It’s part of why many people associate raw Kombucha with gentle, ongoing detox support. ✨
