Chicken Cordon Blu Meatloaf
1 lb 98 % fat free ground chicken or turkey breast
1/2 vadalia onion grated
1 packet Lipton beefy onion soup mix
1 egg
1/2 teaspoon hiya adobo (salt, pepper, garlic)
Mix all the above well in a bowl—
Grab two sheets of parchment paper spray lightly with non stick spray…
Place your ground chicken mixture on top of one of the sheets top with the other and spread the entire mixture out until it’s all about a quarter inch thickness. You can use a rolling pin. Use your hands whatever works just make it all uniform a quarter inch.
Shred 1 block of your favorite cheese, today I used Munster…  press the cheese lightly into the ground chicken, cover the entire cheese layer with your Finley sliced ham…
Gently roll up into a log… seal the parchment paper around it and bake at 350 for 45 minutes… take it out of the oven open up your parchment paper and drizzle some Hughes Polynesian sauce on top. Use a paintbrush painted on evenly put it back in the oven for the last 10 minutes. Take it out and enjoy my friends!

90 Second Bari Bread

Craving Grilled Cheese and Tomatoe Soup?
This is your low carb alternative to white bread!

Bari Grilled Cheese
(I always make these the day after I have meatloaf. Add a thin slice of your leftover meatloaf and it is phenomenal.)

90 sec Lo-carb bread...
So quick and easy!

1 1/2 tablespoon melted butter
3 tablespoons almond flour
1/2 teas. Bak. Powder
1 egg
Mix well and microwave for 90 seconds💙💙
Grilled cheese for lunch💙💙
I put my ingredients thru my bullet for a few seconds then I microwave in my pioneer woman small rectangle dish (this dish comes in a pack of 3 nesting rectangular dishes… it’s the smallest one and perfect for 1 slice of 90 second lo carb bread— the set sells at Walmart for $18) I spray my dish, pour in my mixture and microwave for 90 seconds.
Flip it out immediatly and let cool for a minute or two… then I slice this down the center to make 2 slices…
Butter each side and make your grilled cheese as you normally would in your sauté pan!
I serve it up with a small bowl of tomatoe soup, because you must have tomato soup with your grilled cheese!!!😁😁😁💙💙

Good morning!
Who’s dreaming of McGriddles?

I cooked up a sausage patty using sweet Italian sausage💙
1 scrambled egg…
I spread the egg out in the pan and then I put the cooked sausage patty in the middle and folded it all up like a little package💙

For my protein pancakes:
1 scoop Devotion Angel Food Cake
1 egg
1/4 cup Greek yogurt
1/4 teaspoon p**f powder (baking powder)
1 Tablespoon of Cinnamon BunnSkinny Syrup (you could use water— but I like the skinny syrup flavorings)
I blend it in my bullet and it makes 3 super amazing fluffy pancakes!
Use 2 assemble your egg and sausage in the middle and drizzle with s/f syrup

Ricotta Bake
For those beginners out there...
(8 years out and I STILL love Ricotta bake)

Our favorite First “real” food after surgery seems to be the all famous Ricotta Bake💙

Start with a 16 oz. ricotta cheese (I like whole milk)

Mix in one egg

1/3 cup parm cheese

A pinch of salt, pinch of pepper, pinch of garlic (garlic makes everything better💙) and a pinch of Italian seasoning!

Mix all together and bake for 20 minutes at 350 degrees…

Early on many like to make little individual ones in ramekins, I usually just made mine in a little baking dish. Sometimes I top it with a little sauce and a little sprinkle of mozzarella before baking.

Or you can microwave until bubbly!

Steak Cooking Tips!

#1 get yourself a great cut of meat (filet or bone in ribeye in my house)

#2 Don't get crazy seasoning it... simple sea salt and cracked black pepper is all you need... (Costco has the BEST cracked sea salt and black pepper)

#3 Start with a HOT cast iron pan

#4 Don't over cook it... i know many of you will say, oh I can't eat it like that. It's raw... you don't know what your missing... stick to medium if you cook it until it looks like shoe leather it's going to taste like shoe leather.

#5 use butter in your cast iron - the last minute of cooking it, throw some crushed up garlic, cloves into your butter and baste the steak with it, don't put that garlic in too soon or it will get bitter!

#6 let your steak rest! So many want to pop that off of the stove and start eating. Let it rest at least five minutes.The juices will flow back in and it's going to be amazing!

#7 If you really don't know where to start? Go with a 2-2-2 Method
Heat your pan up and sear, each side for 2 minutes, two minutes flip it over two minutes, have your oven preheated to 410 degrees
Place it into your oven for 2 minutes, bring it out and let it rest....

Saw these at Sam's club today...
Tyson HIGH PROTEIN chicken nuggets...

(Now, GRANTED... all chicken nuggets are going to be high protein because chicken is a solid protein- lol, this may be another instance of awesome marketing, they caught my attention)

In my home, we are huge fans of the Bare Naked chicken that I usually get at sam's. ( Today, these were in the bare naked spot- )
Well, you know that I am a curious one.So I had to try these... especially with the high protein low carb number!
1 carb... hmmmm......
They cook in the airfryer at 330 in 4 minutes...
The bare naked chicken is nice chunks of chicken- These are more of a compressed chicken, according to the ingredients, mixed with mozzerella cheese, And garlic--: I was expecting some type of breading but it's not really breaded- they're more seasoned on the outside with almost a little grilled taste to them...

Not bad... for me, I have to dip them into something. I put them in my hughes, sweet chili sauce-- alone, they are a bit dry...

I personally will stick to my bare naked chicken. I'll take the couple extra carbs, but for someone who is really working on lowering their carb number, you may like this one!

Or make my chicken nugget recipe! 😁💙

I paired them with a southwest chopped salad and a few blueberries!

Sugar Free KeyLime Pie

For the crust I crushed 3 sugar free shortbread cookies Voortmans (purchased at Publix I will include pics)
Added 3 Tbls melted butter
1/4 teaspoon cinnamon
Pressed this into the bottom of 4 small individual pie dishes - each one had about a quarter of a cup of the mixture-  I pressed it down and I baked them at 3:25 for about 15 minutes.
Let cool

Pie filling mixture:
2 cups almond milk or 2 cups of vanilla protein shake
1 large package vanilla sugar free pudding
Beat well and set aside
( my thinking was I would use this instead of sweetened condensed milk that’s in a traditional Keylime pie)

Beat:
1 package cream cheese
1 lime zested and the juice squeezed in
Beat well… when your cream cheese is all beat up add one box of sugar-free lime Jell-O continue beating that in.
Fold in your pudding mixture— beat for 1 more minute.
Divive this mixture on top of your individual crusts or one pie plate if that’s the route you chose to go😁
Refrigerate for a few hours and let set!
Top with zero sugar whipped topping!
And a few limes

Shrimp Scampi over Egg Life Noodle or Chicken if you prefer

Quick Easy and High Protein / Low Carb

1 cup frozen raw shrimp ( i get these from sam's club.I get the tail on) I take them out earlier in the day and put them in a bowl covered with water. I cover it up and by the time it's dinner time, they are thawed, ready to be drained and perfect for this recipe!
Saute these in
2 Tbls butter
2 garlic cloves minced
1/4 teas. Salt and Pepper
1 Tbls. Parsley
1/4 cup Alfredo sauce
This entire mixture cooks in about 3 minutes. You don't want to overcook the shrimp or they will become tough. Preheat your saute pan... add your butter- and then combine all of your ingredients-- it all cooks together quickly- after you saute them for about 3 minutes, throw in your sliced up egg wraps,
2 egg life wraps ( roll these up like a cigar and then use a sharp knife you can slice these into spaghetti like strands)
stir it around, put a sprinkle of parmesan cheese and serve the easiest meal ever!

Breakfast Egg Bite Wraps🩵🩵

( Meal prep these on a sunday and you will have them for quick on the go low carb high protein breakfasts)

You can make these unique- use whatever chopped proteins you love (ham, turkey, bavon, sweet italian sausage, buffalo chicken dip- , and use your favorite chopped veggies!

6 eggs scrambled with 1/4 cup of cottage cheese or milk/cream i know many of you just can't fathom that cottage cheese!😁
Add 1 tespon salt and pepper

Spray your 10x15 baking sheet ( or a nine by thirteen baking dish will work.They'll just be a little thicker) the thinner ones are easier to wrap into the tortillas.

Sprinkle on top of your egg mixture:
I do different versions often.This is just the version I did today: i use about a half a cup of each:
Diced onions, peppers, 2 chopped apple chicken sausage, sliced cherry tomatoes
Sprinkle with 1/2 cup shredded cheese
Bake at 375 for 15-20 minutes
Let cool and cut into 12 slices
Place one slice into 1 mission zero carb flour Tortilla, tuck your ends. Roll it up like a burrito and place it in a piece of parchment paper. I put all of these into a container and then when I want to grab one- I usually microwave it for about 30 seconds to take the chill off and then I pop it into the air fryer. Spray it a little bit and air fry it for about 3 minutes. And you have breakfast on the go every morning. These heat up amazing!

Jalapeño Popper Version😍😍😍
I do a jalapeno popper version that is amazing! Place your eggs down in the greased pan- chop up 2 jalapeno Peppers, make sure you take the veins out.
I microwave a brick of cream cheese in a ziplock baggy, cut the tip off and then I drizzle that all over the top, sprinkle some crumbled up bacon and top with cheddar cheese, these are phenomenal if you love poppers!

Mashed Cauliflower 💙

If you have never tried making mashed cauliflower with a fresh head of cauliflower and baking it in the oven you must try this!! When you boil it on the stove, It tends to get very wet and I just was not a fan... but when you bake it in the oven, it gets this nutty flavor. You put it in the food processor. It is the best mashed alternative ever!

1 head of cauliflower
Chop into pieces and put-on a asking sheet (lined with foil or parchment to make easy ckean up) drizzle with olive oil... Cracked sea salt, cracked pepper, and garlic...
Place your garlic cloves on the sheet as well... it makes the garlic roasted and so sweet!

Bake at 375 for about 30 min. It will start browning... I like mine a little darker (its a nutty favor) you can take them out sooner... Watch for them to soften... Then run these thru a food processor with 3 tablespoons butter, 1/2 cup of heavy cream, salt and pepper to taste!💙💙💙

Pizza Roll Ups 💙

Each roll up is 10g protein with less than 1 carb!!!

Line a baking sheet with parchment paper and spray it with non stick spray… heat your oven to 400 degrees
Lay out your mozzarella slices or shredded mozzarella, top with pepperoni slices, bake for about 4 minutes… watch them closely, they bubble then turn brown quickly… bring them out let cool about 2-3 minutes (you want them cool enough that you can roll with your fingers, yet still s bit hot so they roll) then roll them up… they crisp the longer they set! I serve with a dipping cup of pizza sauce!

Devotion Angel Food Cake
(4 carbs in the whole cake!! )

Then I made a pistachio trifle using the cut up angel food💙

7 egg whites
1 teaspoon cream of tarter
Best well for about 5 minutes until stiff peaks form
Fold in 1 scoop of Devotion Angel Food Cake
Optional - 1 bananas foster flex pack
Put into a greased Bundt pan and bake at 350 for 20 minutes!
It’s light, fluffy and the whole cake is 4 carbs total!! 42 G protein and 200 calories the entire cake!!!
I whipped up some some sf pistachio protein pudding and made the best mini trifle!
1 premiere shake with 2 Tbls sf pistachio pudding powder — blend a refrigerate for 39 minutes it will set nicely! Top your cut up cake with pudding and a sprinkle of chopped pistachios!
Friends if you’re going to make anything, this is the one you have to make so yummy!
