Blueberry Cheese Danish Clouds
Pancakes light, airy, fluffy! You can eat the entire pan and not have that heavy traditional pancake feeling!
For the cloud bread-
2 eggs separated - whites from yolks
(Be careful not to get any yolks in the whites on this one… it will affect the outcome)
Mix 1/4 teaspoon cream of tarter with 2 egg whites and beat until stiff about 3 minutes minimum!(When you think your done beat for 1 more minute)
Then beat your 2 yolks with 1 oz. Cream cheese and 1 teaspoon splenda or whatever sweetener you prefer…
Gently fold the yolk mixture into the white mixture…
Make 4 clouds on a sprayed parchment paper lined sheet— pop into a 350 degree pre heated oven—
If you choose, you could make the clouds just like that or at this point take 3/4 of a cup of whipped cream cheese, whip that up with one egg and a 1/2 teaspoon of extract— I used almond today… and 2 Tbls. of Swerve or whatever sweetener you choose… beat it up until it’s combined… pull your cloud breads out of the oven after 3 minutes, Make a little well with a spoon and put some of your cream cheese mixture into each cloud. About a tablespoon… Today I sprinkled some frozen blueberries onto the cloud breads making a bkueverry cheese danish. Bake for about 12 more minutes at 350… Each of our ovens very so keep an eye on them. Check them after each five minutes.
These are sooooooooo good!! And pretty much all egg!!
