These juicy burgers are filled with crispy bacon and melted cheddar! Serve them in lettuce wraps, on low-carb buns or alongside a fresh salad.

INGREDIENTS

• 1½ pounds 80/20 ground beef
• 6 slices bacon, cooked crisp and crumbled
• ¾ cup shredded sharp cheddar, divided
• 2 tablespoons softened cream cheese
• 1 teaspoon Worcestershire sauce
• ½ teaspoon garlic powder
• ½ teaspoon onion powder
• ½ teaspoon smoked paprika
• ½ teaspoon salt
• ¼ teaspoon black pepper
• Butter or avocado oil for the skillet, if needed

Optional: lettuce, tomato, pickles, onion, mustard, mayonnaise or sugar-free ketchup.

INSTRUCTIONS

1. Combine the bacon, ½ cup cheddar and cream cheese. Divide into four portions.
2. Mix the ground beef with the Worcestershire sauce and seasonings. Handle it gently so the burgers remain tender.
3. Divide the beef into eight thin, wide patties.
4. Place one portion of filling in the center of four patties, leaving a ½-inch border. Top with the remaining patties and firmly seal the edges.
5. Grill or skillet-cook over medium-high heat for approximately 5–6 minutes per side, until the centers reach 160°F.
6. Sprinkle the remaining cheddar over the burgers during the final minute. Cover briefly to melt.
7. Rest for 3–5 minutes before serving.

CHEF’S TIP: Keep the filling away from the edges and seal each burger carefully. Don’t press down on the patties while they cook, or the juices and cheese may escape.

🍗 STOP LEAVING THAT TOUGH TENDON IN YOUR CHICKEN!

Have you ever noticed that tough white cord running through a chicken tenderloin? That’s the tendon—and it can stay chewy even when the chicken is fully cooked.

Here’s an easy way to remove it:

1️⃣ Find the white tendon sticking out from the end of the tenderloin.

2️⃣ Slide the tendon between the two center tines of a fork.

3️⃣ Grip the slippery end with a folded paper towel.

4️⃣ Hold the fork firmly against the chicken and pull the tendon slowly and steadily through the tines.

That’s it! The tough tendon comes out, and your chicken is ready to cook.

👩‍🍳 CHEF’S TIP: Pull slowly. Yanking it too quickly can tear the chicken or remove more meat than necessary.

Always wash your hands, utensils, cutting board, and work surfaces after handling raw chicken.

Spicy Low-Carb Ketchup

🥄 Makes: About 1½ cups

Ingredients:
• 1 can (6 oz) tomato paste
• ¾ cup water
• ¼ cup apple cider vinegar
• 2 Tbsp brown-style low-carb sweetener or allulose
• ½ tsp onion powder
• ½ tsp garlic powder
• ½ tsp salt
• ½ tsp smoked paprika
• ½ tsp chili powder
• ¼–½ tsp cayenne pepper, depending on how spicy you like it
• ¼ tsp crushed red pepper flakes
• ⅛ tsp ground cloves
• ⅛ tsp cinnamon

Directions:

1. Add all ingredients to a small saucepan and whisk until smooth.
2. Bring to a gentle simmer over medium-low heat.
3. Cook for 12–15 minutes, stirring occasionally, until thick and glossy.
4. Taste and adjust the heat, sweetness, or vinegar to your liking.

INSTRUCTIONS

🎄 HOMEMADE VANILLA EXTRACT 🎄

This is such a beautiful and thoughtful homemade Christmas gift—and if you start it now, it will have plenty of time to develop a rich vanilla flavor before the holidays!

Ingredients:

• 1 ounce vanilla beans—approximately 6–8 beans
• 1 cup vodka—80 proof or higher
• One clean 8-ounce glass bottle with a tight-fitting lid

Instructions:

1. Carefully split each vanilla bean lengthwise with a sharp knife.
2. Using the back of the knife, scrape the sticky vanilla seeds from inside each bean directly into the bottle.
3. Add the scraped vanilla pods to the bottle.
4. Pour in the vodka, making sure the beans are completely submerged.
5. Close the bottle tightly and shake gently.
6. Store it in a cool, dark cupboard. Shake approximately once a week.

The extract can be used after 8 weeks, but allowing it to develop for 4–6 months will produce a deeper, richer vanilla flavor.

Ingredients

For the ice cream:

• 1½ cups unsweetened almond milk
• 2 ounces softened cream cheese
• 2 tablespoons natural peanut butter
• 2 tablespoons powdered low-carb sweetener
• 1 teaspoon vanilla extract
• Pinch of salt

For the raspberry swirl:

• ½ cup raspberries, fresh or frozen
• 1 tablespoon low-carb sweetener
• 1 tablespoon water
• 1 teaspoon lemon juice

Directions

1. Blend the almond milk, cream cheese, peanut butter, sweetener, vanilla and salt until completely smooth.
2. Pour into a Ninja Creami pint container. Place the lid on and freeze on a level surface for 24 hours.

6. Make a hole down the center of the ice cream, add the cold raspberry sauce and use the Mix-In setting—or gently swirl it through by hand for a marbled appearance.

3. Reduce the heat to medium. Add the shallot and cook for 2 minutes. Add the garlic and sage; cook for 30 seconds.
4. Pour in the broth and simmer for 3–4 minutes, scraping up the flavorful browned bits.
5. Reduce the heat to low. Stir in the Dijon mustard and Parmesan.
6. Remove the skillet from the heat for one minute. Gradually stir in the Greek yogurt, then return to low heat.
