Meal Prep Monday with Cartwright's Market features Low Carb Zucchini Bread (with blueberries). This time of year, I always end up with SO much zucchini from my garden. I wanted to try a new recipe for bread and add in some blueberries. The flavors pair really well together AND the house smells amazing while this is baking in the oven! I'll definitely be making this again and throwing the extra loaves in the freezer!

Meal Prep Monday with Cartwright's Market features Cottage Cheese Chocolate Chip Muffins. Not gonna lie, this is not a favorite of mine. 😅 BUT, not all meal prep recipes are a win. I was trying to have a more protein-filled option for in the morning and I think with some minor tweaking the recipe could be a little better. Maybe more chocolate chips? You could also try blueberries instead, use pumpkin puree instead of oil or even swirl in some cinnamon.

Meal Prep Monday with Cartwright's Market features Ground Pork Stir Fry! Delicious with rice, sweet potatoes or as lettuce wraps! You can use basically any vegetables for this. My garden is out of control already so I added in zucchini and kale. Great weeknight meal that doesn't take much time at all to put together!

Meal Prep Monday with Cartwright's Market features Kalua Pork made in the Instant Pot! We picked up my pig last week and I knew I wanted to try making Kalua Pork! I had no idea it could be THIS easy!!! Hardly any ingredients and absolutely delicious!! Start to finish, about an hour and a half and you're good to go - it's as if it was simmering all day!!! I'll definitely be doing this one again.

Multiple agencies are responding to a fast-moving wildfire on Upper Applegate Road near Ruch. In a 1:35 p.m. update, the Oregon Department of Forestry reported the fire was an estimated 50 acres and growing in the 2,000-block of Upper Applegate Road. ODF Southwest reported resources are still responding including multiple engines and crews from numerous agencies including the US Forest Service, BLM and structural partners including the Applegate Valley Fire District, Rural Metro Fire Department and others. ODF has also ordered numerous aircraft including Type 1 and Type 2 helicopters plus two large air tankers. The Jackson County Sheriff's Office has issued a Level 1 "Be Ready" evacuation notice for the following zones: JAC-419, JAC-422 and JAC-428. Residents in these areas should be aware of the danger and stay informed. Make plans to prepare to evacuate. For preparedness tips, visit "RVEM.org."
