Our freezer corn this year!
After cutting the corn off the cob it went in to the roaster pan with one stick of butter cover and bake for 40 min on 325 degrees .. cool , bag and freeze.

We decided to take the table out to the sweet corn patch. We picked, shucked and cut the corn off out there leaving the cobs behind in the field.

SALSA

INGREDIENTS
7 large roma tomatoes, diced
1 bunch cilantro, chopped
1/4 cup red onion, chopped
1-2 cloves fresh garlic, minced
1 jalapeno, cut into quarters finely chopped (seeds & membranes removed for less heat)
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon cumin
juice from one lime

Chop, dice and mince as stated above. Combine all ingredients and serve.

***If I'm in a hurry...
***For faster prep just add all ingredients to blender and pulse till blended. Serve with your favorite tortilla chips and enjoy!

Do y'all have days where you just need to soak up some vitamin D, listen to the birds sing and thank God for all things. All things including the hard times that may have been a struggle at the time but gave you insight or knowledge. We all have struggles so be kind and lift up others when you can.
