You have done so many amazing things as a 6 year old, but I want to always remember 6 as the year you became the absolute best BIG sister to Brea. You were already amazing to Bristol, but to see you with Brea showed me a side of your heart that makes me feel like I could burst with pride and love.

Creamy butter chickpeas with garlic naan 🔥

𝗧𝗵𝗲 𝗖𝗼𝗺𝗽𝗹𝗲𝘁𝗲 𝗣𝗹𝗮𝗻𝘁 𝗕𝗮𝘀𝗲𝗱 𝗕𝘂𝗻𝗱𝗹𝗲 𝗳𝗲𝗮𝘁𝘂𝗿𝗲 𝗼𝘃𝗲𝗿 𝟮𝟬𝟬+ 𝘃𝗲𝗴𝗮𝗻 𝗿𝗲𝗰𝗶𝗽𝗲𝘀 + 𝟮𝟴 𝗱𝗮𝘆 𝗺𝗲𝗮𝗹 𝗽𝗹𝗮𝗻 𝗟𝗜𝗡𝗞 𝗜𝗞 𝗕𝗜0 ⬆️ 🔗 @the.plantbasedrecipes
Recipe:
For the creamy gravy:
- 1 tbsp oil
- 1-2 onions
- 1 tbsp cumin seeds
- 4 garlic cloves
- small piece ginger
- 1 green chili
- 2 tsp garam masala
- 1 tsp chili powder
- 1 tsp turmeric
- 200 g tomatoes
- 65 g cashews
- 1 tsp sugar
- salt
- 1 1/2 cup water
- 3 tbsp vegan butter
- dried fenugreek leaves („kasuri methi“)

For the chickpeas:
- 500 g cooked chickpeas
- 1 garlic clove
- small piece ginger
- 1 tsp coriander
- 1 tsp chili powder
- 1 tsp cinnamon
- 1 tsp cumin
- oil
- salt
⠀
To serve:
- basmati rice
- fresh cilantro
- homemade garlic naan or paratha
- more butter
⠀
❶ Sauté onion and cumin seeds until translucent and slightly browned. Add finely chopped garlic, ginger and chili, sauté for 2 more minutes, then add the ground spices, cook until fragrant stirring constantly, then deglaze with tomatoes. Add cashews, season with salt and sugar, then cover with water and let it simmer for 15 minutes.
❷ In the meantime place chickpeas on a baking tray, rub with garlic, ginger, spices, salt and oil and bake in the oven at 200°C for 15-20 minutes until slightly roasted but not too dry and crispy.
❸ Blend the gravy until perfectly creamy.
❹ Pour the gravy back to the pan, then add the butter, kasuri methi (dried fenugreek leaves) and chickpeas and stir to combine.
❺ Serve with rice, naan or paratha, some fresh cilantro and a flake of butter. Enjoy!

Add 650g of cherry tomato’s to a pan with plenty of oil and salt and roast or fry until softened and juicy. Add 250g of orzo and 400ml of stock and cover and boil for 12 minutes. Remove from the heat and add 1 tbsp of sun dried tomato paste and 2 tbsp of vegan cream cheese and stir well. Add a large handful of spinach and cover to let it wilt. Plate up with creamy coconut yogurt and top with a dressing consisting of 1 tbsp olive oil, 1 tsp Sun-dried tomato paste and chopped thyme and parsley. Add toasted walnuts and serve.

ROASTED BROCCOLI WITH TAHINI CURRY SAUCE by @ler.hlv
ingredients :
1 head of broccoli
2 tbsp olive oil
salt and pepper
for the sauce :
1/2 cup cooked white beans
50g tahini
1 tsp curry powder
salt and lemon juice, to taste
toppings :
pine nuts
chili flakes
method :
1. preheat oven to 400°F (200°C).
2. blanch broccoli in boiling water for 5 mins, then quarter.
3. place broccoli on baking sheet, drizzle with oil, sprinkle salt & pepper.
4. roast for 15-20 mins until crispy edges.
5. blend white beans, tahini, curry powder, salt, lemon juice.
6. serve broccoli on tahini curry sauce, sprinkle with pine nuts and chili flakes
prinkle with pine nuts & chili flakes.
