Here’s the recipe
BUTTER BUTTERMILK BISCUITS
4 1/2 cups all-purpose flour, plus extra for dusting
2 tablespoon baking powder
4 teaspoons sugar
2 teaspoon baking soda
2 teaspoon salt
1 cup (2 sticks) cold butter, cut into small bits
2 cups buttermilk
1. ���Place a rack in the center of the oven and preheat to 450°F.
2. ���In a large bowl, whisk together the flour, baking powder, sugar, baking soda, and salt. Cut in the butter with a pastry cutter, your hands, or two knives until the mixture resembles coarse meal. Using a rubber spatula, fold the buttermilk into the flour mixture until all the flour is moistened.
3. ���Sprinkle a small handful of flour over a work surface. Turn the dough out onto the surface and knead lightly two or three times with the palms of your hands until the mixture comes together. Roll the dough out until it’s an inch or so thick. Cut the dough with a biscuit cutter.
4. Place the biscuits on a baking sheet and bake until light golden brown and firm to the touch, about 12 minutes. Serve warm or at room temperature
STRAIGHT FROM THE FRIDGE
For an airy and flaky dough, make sure your butter is cold when you’re cutting it into flour mixture. Work quickly so that it doesn’t start to melt on you, especially if you’re using your hands.
