literally my go to favourite soup Avgolemono Soup Ingredients: • 7 cups chicken stock • 1 cup white rice or greek orzo • 2 eggs, separated • ½ cup lemon juice (~3 lemons) • Chicken bouillon to taste (2-3 tbsp) • 1/2 Rotisserie chicken, deboned and shredded • Salt to taste • Black pepper & lemon wedges to serve Method: 1. Bring the stock to a boil and then add the rice. Set to simmer until tender, about 15 minutes. 2. Meanwhile, juice the lemons and beat the egg whites until soft peaks form (do not overmix or eggs will be chunky in the soup). 3. Once formed, slowly add lightly beaten egg yolks to egg whites on high speed. 4. Slowly drizzle lemon juice into egg mixture while stirring. Continue stirring and slowly add a cup of hot stock to the egg mixture to temper the eggs. 5. Remove soup from heat and pour egg mixture into stock. Stir until combined. 6. Taste and season with chicken bouillon, lemon and salt as needed. In most cases these sweet miracles are placed in the NICU which is an extremely tough and scary experience for families. Shout out to all the amazing NICU nurses! We have a lot of friends who have gone through this difficult journey and we also have a member of our family who was born at only 2lbs and is a NICU warrior.
