πŸ‹ Simple Lemon Vinaigrette Recipe πŸ‘‡

I don't know about you but whenever I try to eat healthier, I tend to overload my fridge with options. The problem is that it tends to add to food waste and frustration with a messy fridge. That is can be so discouraging to the process!

I need quick, healthy options that I can just make on a whim when I want something new, instead of buying something different that I may not like or will just forget about. This simple lemon πŸ‹ vinaigrette is the answer!

It's quick to whip up because you likely already have all the ingredients on hand! Make a small batch, so it's always fresh and gets used up fast – no more forgotten, expired bottles in the fridge door.

Suddenly, you've got delicious, healthy dressing for your salads πŸ₯—, veggies, or chicken. Simple goodness, no fuss.

πŸ‹ Simple Lemon Vinaigrette
1/4 cup mild vinegar (I like rice wine vinegar, but white wine is good too!)
2 Tbsp dijon mustard
1 clove garlic, grated over a microplane (or just smash it into a paste with the non-sharp end of the knife)
Salt, pepper, oregano
1/2 cup olive oil
1/2 a lemon, juiced

Whisk together vinegar, mustard, garlic, and seasonings in a jar. Drizzle the olive oil in slowly while whisking. Whisk in the lemon juice. Add the top to the jar and shake it for good measure.

Back home after our trip, and my brain is a little scrambled – anyone else feel that post-travel fog?

The first thing I do to get back into our rhythm is grab my notebook for a good old-fashioned brain dump.

Before we left, I used the brain dump and quadrant pages in here to map out our quick trip – it helped me visualize everything we needed to do without feeling overwhelmed. It really proves that planning doesn't have to be complicated to be effective.
