When I saw this grilled cheese sandwich idea, I said I had to try it. I made a kosher friendly kimchi version, and the result was phenomenal!! I will definitely do this sandwich more often. Unfortunately I'm the only kimchi lover at my home. But, since both of my daughters are little, they still have time to change their minds. I don't think I'll be able to win my husband on this one 😆

In case you didn't know, "kimchi is considered a superfood due to its rich content of probiotics, vitamins, antioxidants, and fiber, which offer numerous health benefits like improved gut health, boosted immunity, and anti-inflammatory effects. Its nutrient-dense, fermented nature makes it beneficial for both the gut and overall health".
So, eat kimchi, friends! And sourdough!! 😉

Who said there is only one way to slice your bread. I always place cut-side down when going halfway my sandwich loaves. This give me more stability to make a nicer and even slice.
