While this taco may seem simple you’d be wise not to write it off. It’s not some viral recipe that gets wrapped in quesadilla before being shoved in a burrito. This is a world within the palm of your hand. The earthy flavor of the corn tortilla that gets awaken by heat. The freshness of the onion that gives a crunch before melting away. A grilled ribeye with the right amount of salt, fat and char. Everything brought together with the heat of a homemade salsa that lingers between bites. A couple bites and it’s gone. A couple bites and you just might remember it forever.

Reverse seared wagyu ribeye filets. A good dusting of steak seasoning, and then on the grill for some smoke. Once these got up to temp they were finished off with a sear on both sides. That kiss of smoke was tipping point on these.
