Cooked up this wagyu ribeye filet from Snake River Farms this weekend. Beautiful marbling that rendered perfectly over the coals. This one also had some heft. That’s never a bad thing in my cookbook.

I had some help with a recent delivery. I got these incredible knives from Williams Knife Company, and my nephew showed up just in time to lend a hand. He’s a huge fan of BBQ, and loves to help when he’s able. I loved seeing his reaction to some of the knives, and it was a good opportunity to talk about knife safety. Thanks again to WKC for the pieces, and will be showing these off more in-depth soon. Their new boning knife is going to be heavy in the rotation.

A pretty simple rib cook. Trim, smoke, sauce, and rest. There’s a few steps you can add, but these turned out great anyway. A little butter helps. Maybe something sweet. Always room for growth, and do what makes you happy. How many would you eat?

I was driving by Sprouts Farmers Market the other day and I remembered that FLY BY JING was now in stock. So a quick stop and we were in business. These chili crisp marinated colossal shrimp with the perfect tag team partner to the noodles. The texture and taste on these were killer. I loved them to the last slurp.
