Quick & Simple Coconut Macaroons - Diabetic Friendly🥥
These simple cookies are high in healthy fats and low in carbs, making them a great sweet treat.
Ingredients:
3 large egg whites, beaten stiff
1/3 cup erythritol or monk fruit sweetener (adjust to taste)
2 cups unsweetened coconut flakes, toasted
1 tsp vanilla extract (optional)
Optional: 1/2 C - 1 C sugar-free chocolate morsels
Instructions:
Preheat oven to 320°F (160°C). Line a baking sheet with parchment paper.
In a large bowl, beat the egg whites until stiff peaks form.
Gently fold in the sweetener, toasted coconut flakes, and vanilla extract (if using).
Optional: Add choclate morsels.
Using a spoon or cookie scoop, place small mounds of the mixture onto the parchment paper.
I chose rectangular shapes (and one round one). Choose the shape(s) of your choice.
Bake for 15-20 minutes, or until golden brown.
Allow the macaroons to cool on a wire rack.
