Cracked open ChickenDuck Wheated out here in Hondo, and it is a bad day to be a dove I tell you what.

Deep amber in the glass. Nose is roasted vanilla, honey, bright red fruit, a little baking spice. But who cares about the nose. On the palate it’s wildflower honey, strawberry, and spiced oak, and it finishes with light leather, barrel char, and oak spice. Easy sipper, honest juice, and for forty bucks it’s a flat steal.

ChickenDuck was the first brand to bring in Standard Cooperage Texas oak. Standard Cooperage is the first cooperage in the state, so for the first time the oak itself is Texan. This bottle isn’t part of that program yet. But they’ve got a finishing series on the horizon, and that’s the reason to keep this brand on your radar.

Texas oak in the barrel is a whole different conversation than Texas heat on the rickhouse. Pay attention.

Is sourcing wh***ey a craft, or is it just shopping?

The purists will tell you if you didn’t distill it, you didn’t make it. So I put it straight to Hemal Patel, a guy whose whole brand is built on barrels he didn’t distill.

His answer? It comes down to vision. Anybody can find the cheapest juice and slap a label on it. Picking the one barrel that makes somebody stop and go “wait, what IS this” is a different game entirely.

Some nights don’t need much. A beat up copy of Band of Brothers, a heavy pour, and nowhere to be. Tonight that pour was Patel’s 95/5 wheat wh***ey.

95% wheat, 5% malted barley. Single barrel, cask strength, 115 proof, 8 years 3 months. That number reads hot on paper. It does not drink anywhere close.

The nose pulls you in easy. Sweet cereal right up front, a little cola syrup underneath, and just enough zest and spice to keep it interesting.

Then the palate takes over and this is where it wins me. Thick and viscous, sticky sweet, like the orange gummy candies you used to beg for at the register. Under that it turns into frosted Honey Nut Cheerios, straight up, with a subtle oak spice riding along so it never goes flat.

The finish lingers longer than you’d expect at this age. Allspice and oak settle in, and that Cheerio note just refuses to leave.

This one sits dead center in my wheelhouse. No warming up the palate, no working for it. A sweet, easy, reach for it again wheater I could lose a whole evening to and not complain once.

Wh***ey is proof that control is overrated.

Save this if you love the process, not just the result. 🥃

A barrel can sit a millimeter off from the one next to it and come out a completely different wh***ey.

That’s the magic. Humidity, placement, time. All of it changes the final pour.

And honestly? Life works the same way.

You can follow the recipe exactly and still get a different outcome than your grandma did. That’s not failure. That’s the beauty of it.

Is sourcing a craft? 🥃

This week on Swamp Sippin’ I sat down with Hemal Patel and Joe Godfrey of Patel Bourbon — a brand that doesn’t distill a single drop and will look you dead in the eye and tell you that’s the point.

We poured through the whole Bespoke lineup. The 95/5 wheat wh***ey, both ryes, and the 75/21/4 bourbon. We got into the Georgia aging, why they bottle cask strength and uncut every time, and the fight nobody wants to have out loud: is picking the right barrel its own kind of craft?

My answer might surprise you. Theirs definitely will.
